[Disclaimer: I've never written a demo, but] Have you checked out Preacher's article in Hugi Magazine № 30 (it's about design of old-school demos)? Smash (of Fairlight) had his blog called "Direct to Video", but demos of his team are the high-end, plus he hasn't updated it since his departure from Sony... For other high-end demos there are often seminars during parties and they are usually recorded (hard to recommend something specific, but if you find something specific from Fairlight, ASD or Conspiracy, it's always worth a check).
