What are you smoking? You must live in a small town. It’s marketing, good food and hype. It doesn’t happen magically. There’s incredible restaurants that aren’t in “up and coming” places that hipsters are unaware of, and therefore aren’t “special”. Look at these people’s menu and truck name. Has hipster ig kids written all over it

I've been there and done it guys, with great success.
In the end it was to much, now we've had to open a restaurant - café with full size kitchen to cope with the high turnover. But you are right in one thing for sure, you will never work for anyone else again. EVER. 👍🙏🥰
