    Lionel fut un ami durant 14 ans, un homme qui savait écouter et c’est rare, et souvent me manquent les moments de cette époque, et nos fous-rires aussi.

    This is just amazing. SEEING Poilane caressing the dough is priceless. It makes me think how much I love books, but that seeing something like this, the actual movements...that is something words cannot convey. You can read 100 books about baking/cooking and you would just barely get the idea. You see a 5 mins (30 seconds will suffice) youtube cut and it changes the way you cook forever! It is maybe just that our brain is hardwired to understand actions through seeing...Thanks anyway

    I saw the original Dorie Greenspan piece many years ago and told myself that I must go to the bakery that makes those cookies. The way he made the dough, not in a bowl but on the board, really left an impression on me. And now, here I am in Paris, and unbeknownst to me at the time, I had reserved a room at a hotel very close to Poilane! I walked there a few days ago and bought the cookies. They are so good! The store is much smaller than I thought, and sadly, there were no punishments in the basket by the counter. But finally, I have visited the bakery and eaten the famous cookies.

    WOW! Thank you very much. I appreciate it. Actually i shot the ftge of him making the cookies eight years before doing the story and then only because the experience of watching his hands always stayed with me. Why did i wait eight years? no answer.

    around 10 years ago i was quite enthusiastic about baking and watched this video. i remember being very impressed by the image of this long hair man attentively mixing the dough with his hand, like an artist.
    today, on youtube, i accidentally saw a baking masterclass ad by a young French girl and when she mentioned her Dad and his picture flashed on the ad, i realized it was this man Lionel Poilane! After he died his daughter Apollonia Poilane has taken over the bakery.
    Amazing how you remember someone for so many years just from a few seconds of video.

    J'ai creci avec "60 minutes" quand j'etais petit. Ce bon et aigre doux a voir, maintenant que je suis 36 et un chef, le video de Poilane. Il et douce pour moi parce que c'est historique de mon age a l'enfant et il est aigre parce que j'ai perdu ma mere qui etait ma plus grande inspirationne. Ma mere etait une artiste et professeure a l'universite avant elle est mouri de cancer. J'ai pres du meme age que Apollonia et maintentant elle est ma - n'inspirationne culinaire!

    Thanks for posting the updated video, though I would like to see the original again. Being unemployed for so long I have taken to perfecting my cooking skills. I have made these cookies with a little known secret and they are wonderful. I hope to go to Paris some day and try the wonderful pastries there first hand. Thank you very much.

    My own experience with the bakery is that their current customer care falls way short of Lionel's fastidiousness. My wife ordered a loaf weeks in advance of my birthday and it still arrived late and when it did it was stale. We live in England so I accept there are the vagaries of international travel to consider, but what we feel is unforgivable is that bakery has subsequently completely ignored our complaints. There response to my wifes complaint was to simply send us a copy of the invoice. In the future we will make our own.

      So I sent another e'mail giving you my wifes details. If only your customer care could be elevated to an art form. It seems most of the training for customer care goes into equipping your people with suitable patronising euphemisms ('negative experience') rather than sorting the problem out; the modern way!. Could you not at least reply?... that isn't magic you know. You have now added time wasting to the reasons we won't be dealing with you again.

      I have seen the video.... It is typical money hungry company. they think that they know how to make bread.... but I can tell everybody that there are very small towns in all over the world which make the bread much tastier and healthier than the bread this industry is making

    Video is inaccurate about age of oven. The oven was built in 1932. Also the video shows something consuming raw flour and egg: this is highly recommended against for food safety reasons. Other than that, very interesting! But I sadly won't be sharing it for those reasons.
