You have to remember that fish and especially cream should not be boiled for too long. It was not mentioned in the video. The fish breaks down and the cream gets greasy.

this is the classic french bouillabaisse minus the cream. The same exact soup exist in greece minus the cream. It s called bouyabessa or kakavia
