Very cool. Glad to see something good coming to this building. Seeing the jukeboxes in that section really hit me, because I remember that used to be the books and magazines section of the store and I spent a lot of time hanging around there while my mom shopped.
THIS is every Pinheads dream 'parlour'. All the best in your success and volunteer recruiting. I'd love to volunteer but I live in PEC, Ontario. I was literally trying to figure out how I could swing a stint there to volunteer for a few weeks as I just love refurbishing EM's at home. (I know people hate unsolicited advice, but here goes anyway with the best of intentions, you may want to see if solar panels on your roof would help your bottom line, and I hope the eating area is nostalgic like Nutcracker Family Restaurant.
From Wiki: The word "jukebox" came into use in the United States beginning in 1940, apparently derived from the familiar usage "juke joint", derived from the Gullah word juke, which means "bawdy".

How many paid techs do you have or plan to have on staff?
You'll need some sound damping
