    For those who can’t buy kewpie Mayo: in any good Mayo recipe replace the whole egg with two egg yolks and the acid component with rice vinegar, add a pinch of sugar and a tiny pinch of dashi powder or MSG.

      Thanks so much. I love kewpie mayo but hate the price - about $7. I've been making my own mayo for yrs now and couldn't figure out what the differences were between it and our regular mayo. The egg yolks, sugar, less acidic viengar, etc. all make sense.

      when it comes to sensory evaluation, we normally taste things on their own. so yeah, eating mayo with a spoon seem quite normal to me. i've even tried ingredients on their own, like flours, protein powders, flavorings, oils, etc etc

    Most people don’t know that back in 1912, Hellmann’s mayonnaise was manufactured in England. In fact, the Titanic was carrying 12,000 jars of the condiment scheduled for delivery in Vera Cruz, Mexico, which was to be the next port of call for the great ship after its stop in New York...
    This would have been the largest single shipment of mayonnaise ever delivered to Mexico. But as we know, the great ship did not make it to New York. The ship hit an iceberg and sank, and the cargo was forever lost.
    The people of Mexico, who were crazy about mayonnaise, and were eagerly awaiting its delivery, were disconsolate at the loss. Their anguish was so great, that they declared a National Day of Mourning, which they still observe to this day.
    The National Day of Mourning occurs each year on May 5th and is known, of course, as Sinko de Mayo.

    I have one of these from Wesson that was my grandma's. She had a "famous" homemade blender mayo that was very similar to this recipe but instead of mustard, she used a little mustard powder and instead of black pepper she used a pinch of cayenne. The secret was chilling the oil in the fridge overnight. It made the recipe more "foolproof" and also resulted in a thicker, creamier mayo. Delish!

      I've never heard of chilling the oil. I know I have to warm my eggs first otherwise the mayo wants to _break_ . Did she use room temp eggs?

      @@libbyhardel1826 Hellmann's is creamier and sweeter, whereas Duke's is more gelatinous and salty. There's also a slight difference in color. Duke's is slightly more beige yellow, whereas Hellman's is more of an eggshell white. Kraft is closer to a true white and its flavor profile is mixed evenly between the sweetness of Hellmann's and the saltiness of Duke's.

    This was so cute. My father and I made mayo about a year ago with an immersion blender and I really liked it. It tasted pretty similar to Hellmans except it was more lemony. Through much trial and error we found a neutral oil is best, and apparently olive oil will give it a bitter flavor. But if you add the oil a bit slower and whip it a little longer the texture will be thicker.

The one time I tried it, I found the taste & smell to be so disgusting that I couldn't even salvage my purchase by using it as a component of skin/hair care. Perhaps the one I purchased was rancid? You have given me some hope, and I may give it one more shot! I'm on a somewhat fixed income, so I hate buying things I end up not using...

      😁 my mom makes mayonnaise with eggs, oil, lime juice and salt. It's delicious. Only a bit of lime juice gives this amazing tangy flavor 👌🏻 very similar to McCormick(Mexican) mayo.

    I often used to make my own mayo, using my stick blender. It is so quick, you put the blender into a jug with all the ingredients added, right against the bottom of the jug. Switch it on and semi slowly lift the blender to the surface, and your mayo is done. If you want a slightly thicker consistency add more oil. To stabilise the mayo add a few tablespoons of boiling water while whizzing, at the end. You can flavour it with anything, I love adding about half a green pepper, and some garlic. Sometimes I add smoked salt, or fresh herbs or chutney. It's so cost effective. Once you get the hang of it you can experiment with different ratios of oil and acid to egg. I also use whole eggs, not just the yolks. I mostly live alone now so seldom make it nowadays, it's rich and you need to make a fair bit at a time, and it isn't shelf stable. I love your channel so much Emmy, your enthusiasm and joy for life is so uplifting during this troubled time...may your channel grow even more as you spread your sunshine and wonderful smile.

    Wesson still made the 'mayonnaise maker' all the way to about 1984. My father worked for Hunt-Wesson for nearly 50 years and I remember my parents buying a few of these at the Hunt's "dent shack" when Wesson oil still came in glass bottles. "Dent Shack" was an employee accessible discount store where company products could be purchased that couldn't be sold to commercial customers due to literal 'dents' in the cans, or label errors, etc. My folks, now in their late 70s, still have one and use it for Mayonnaise and other dressings. We even found the one they gave to my grandmother when we were cleaning her house last year after she passed away.
    Oh, and in case people don't know; Hellman's is called Best Foods West of the Rockies.

    I got into making my own Mayo when I was doing Whole30. SUPER easy, I don’t even measure the non-oil ingredients. One thing I found I prefer is apple cider vinegar as the acid rather than lemon juice. I also didn’t add any sugar since the diet was no sugar (among a plethora of other things like dairy and wheat). It’s SO GOOD on roasted new potatoes and pan seared pork chops. I used an immersion blender in a tall mason jar, didn’t have to pour the oil, the blender does the work. The trick is to place it all the way down into the bottom of the jar (oh and order of ingredients matters: egg at the bottom, then mustard and vinegar and salt, and oil on top) and *SLOWLY* lift the blender up once you start getting the Mayo at the bottom. The jar should be just a little wider than the blender head, and the little bit of room between the two acts like the oil drizzle when you lift it slowly enough. And best of all, it literally comes together in less than 2 minutes (4 if you count putting the ingredients into the jar). Anyway, I haven’t done it in a while, plus Kewpie is far superior to any other mayo in existence lol

    An interesting "old-school" kitchen gadget. I've made mayonnaise a few times, using a Bamix stick blender and Alton Brown's party mayonnaise recipe. I recycled an empty Duke's container and buzzed it up right in the jar. Store bought is very convenient, but it's worth the time and effort to do homemade once in a while.

    I add garlic powder when I make homemade mayo in my blender. Also, after refrigerating it's a more similar texture to the others. I love homemade but it didn't last quite as long so it's a sometimes thing!

    What a cool bit of history. I love making mayo at home because it's so much better than anything from the store, and I can play with the recipe to suit my taste or whatever style I'm trying to make (Polish and Japanese are my faves). Something like this would make it so much easier than using a bowl and whisk as I usually do. This even looks fairly easy to clean, unlike a blender or food processor... just put in some soapy water and give it a good shaking, and rinse.

    That mayonnaise maker is actually a really great idea. I've heard that adding the oil too fast can mess things up. So that lid is wonderful for those who may worry they won't add it slowly enough.

    In the 60-70's in Hungary we always made the mayonaise at home. The recipe was identical the device was only a whisk and wooden spoon. My Mum made the best mayo. These day we are so laizy. We buy the store mayo not thinking what else they put into it. Let us go back to basics. Well done Emmy.

    When I was little, I made the mistake of stumbling upon an eating contest on TV and they were eating pounds of mayonnaise with a spoon. Needless to say, I almost threw up and it took me years and years to eat mayonnaise again without gagging.

    I love homemade mayonnaise, it tastes so much better. It's interesting that you put the whole egg in and it worked, I was always taught to only use the egg yolk by my mum. I also love to add some crushed garlic as well which gives it an extra yumminess, plus in addition to the mustard, salt and squeeze of lemon. And a tip that my mum taught me in case the mayo stays too runny cos the oil didn't emulsify fast enough to add half of a crushed boiled egg yolk to it, and whisk it really fast, and magically it fixes it into a thicker texture again every single time!

    I’ve made mayo several times using an immersion blender and different recipes, it’s amazing how different it can be. Malt vinegar, horseradish, paprika and onion made a good beef sandwich mayo. I’ve made it with olive oil, balsamic and and white vinegar, fresh garlic, and extra pepper. That was pretty good on lighter sandwiches. Next I want to try peanut oil, lime juice, powdered ginger and garlic, and a touch of peanut butter. Mayo can hold a LOT of flavor.

    This is exactly why I make my mayo with a tall narrow mason jar and an immersion blender. Perfect dimensions, and measurements on the side of the jar.

      The kewpie Mayo has more egg yolk, uses a milder vinegar (rice vinegar) and msg (on the label as yeast extract). I’ve heard some people say that the version actually sold in Japan has dashi powder but I don’t remember it having that slightly smoky flavor that dashi has. It’s been 25 years since I’ve lived in Japan so I could be misremembering.

If you are in the States then I’d say you’ll probably face more blatant racism there than you would in Japan. I hate that racism exist, that it has been so traumatic and that it deters you from fulfilling your dreams. **hugs**

    In the 50s and 60s when I was a little girl, my mother usually made homemade mayo if she had the time. She did the the emulsification with an old fashioned hand held rotary beater. She had an electric beater but never used it for mayo as she said it would not set up right with the faster electric beaters. Also, she said never to use homemade mayo on anything that would be kept awhile or be carried out into the heat because the raw egg used could cause food poisoning if not kept cool and used quickly. Her homemade mayo tasted wonderful, but my school lunches were always made with store bought mayo because they could not be kept cool in the classrooms that had no A/C in those days.

    There was a show on mtv called “I bet you will”. It was a dare show where people earned money by doing crazy dares. One episode showed a man shaving his hair and then eating it with Mayo. since then, a lot of Mayo on food grossed me out.

    When I make homemade...egg, lemon, salt and oil...the family devours it within days, even my daughter, who normally detests this condiment. I use a Vitamix blender and can bring it to a consistency similar to the stiffness of the Hellman's. Sometimes, I will tuck in a combination of parsley, thyme or other herbs...delicious. Thanks for the show, Emmy. :)

    Ive been making homemade mayo for a year or so and i will never go back. You can change up the oil or seasonings or the acid to change the final product. Its fun to play around with flavors. Lately ive been taking half of the mayo and adding sriracha for my own sriracha aioli.

    I have a great aunt who used to have a hot sandwich or "torta" (as we call call them here in MX) shop and she used to make her own delicious homemade mayonnaise for them... they were amazing!!! She also used to get her bread from a local family owned bakery where most of it was handmade. Best tortas ever!

    I enjoy mine with the addition of a few cloves of garlic and excluding the mustard. In a hand blender, blend until you get a smooth consistency similar to your homemade version. Stores well in the fridge for up to two weeks. A fairly simple recipe would be on a tortilla wrap place a handful of pulled or shredded chicken, some salsa, season with salt if needed, and top with a few tablespoons of the garlicky mayo, my go to beer time snack. 😋🤤

      Store bought mayo is pasteurized... eggs from one's own chickens are pretty safe because there aren't the same possibilities for contamination in the whole handling process.

    What a beautiful gadget. I did read somewhere about mildly soft boiling the egg first if you're that way inclined. But a hand-blender would be required in that case rather than shaking a jar/this adorable vintage piece.

    I haven’t purchased mayonnaise in probably close to eight years. I always make my own, with an immersion blender. It took many attempts to find the perfect combination of oil, vinegar and spices but once I got it never looked back!

    I’m not a huge fan of Mayo but the one way my mother taught me to use it in food, and that I actually enjoy, is to spread it on the outside of bread to either make panfried toast, or for grilled cheese. It crisps the bread up so nicely and doesn’t taste super strong unless you put a thick layer on!

    I use a handheld blender, add the egg, lemon juice and dijon in a tall container (like yours), set the blender down over the top of the egg (so it covers it completely), add 2 dl of oil, and then you start the blender while slowly dragging it up through the oil. Bada-boom - mayo in a minute 👍🏼 I make my aioli like this as well, just add the pressed garlic with the egg.

    I hated mayo as a child and would eat canned tuna on buttered bread. In my early 20's I discovered that I now loved mayo! So I always taught my kids to take 1 bite of everything, never know you might start liking something you hated! Thanks for sharing all your wonderful gadgets with us!

    :) I have been making homemade mayonaise for a while now. It's so easy to make and allows you to experiment with it.It doesn't last as long as store bought, but it's so versatile. If I see that I have some left after 5-6 days, I just dump the rest into any dish I am making as extra flavouring.
    I use an emersion blender and with that you can easily get to the same consistency you see that Hellmans had on your plate. I believe that if you had dropped in about one or 2 tablespoons of oil directly into the container at the end, and not use the drizle function on the top you would have seen it solidify even more.
    I personally love lemon juice for a ceasar salad dressing, but when making mayonaise I much more prefer white vinnegar as the acid. In addition I like to add a bit or worcestershire, dash of any hot sauce and/or some capers.
