Egg sandwiches were a rare treat when I was growing up. My mum used to grate the egg when it was warm, add softened butter and some curry powder. On my way to the kitchen right now.

Eggs are a great entry to cooking for kids! When I was a child, scrambled eggs were the first thing I was ever taught to cook on the stove, and I remember feeling so, so good about the entire process! Not only was I being trusted to operate a possibly dangerous appliance (supervised at first, of course) but when I ate the eggs after, they were genuinely delicious, and it blew my mind to think that I, a kid, could prepare food that my parents, grown ups, would eat! This influenced me to this very day.
Egg salad always reminds me of my grandmother. I haven't had any as good as hers since she passed away. She always added a drop of white vinegar to hers. 💜🥚
I now feel less weird about adding pickles to mine. And since Emmy adds sugar I guess sweet pickles aren't so bad after all. Now off to add pickles to everything.

The perfection of a simple egg salad sandwich. I went to a bakery in palo alto and had one, I had to thank the owner for making it properly, no onions or relish, no olives (but I love them!) just simply egg, mayo, little salt and pepper on fresh baked white bread, one that's fluffy but with nice body and taste. It was just what I wanted at the time, and it was amazing. I need to get some japanese mayo as its more vinegary flavor really does make the best egg sandwiches.

“Like it never happened...” is a familiar quote in my kitchen! I have to say it kind of stung when you said the egg cooker was almost 50 (I was born in ‘71), but I loved seeing the cooker...in college I bought one at the thrift store for $1.00, mine had a metal lid, it was such a good score, and I used it all the time. My parents gave me all their kitchen wedding gifts from 1960, toaster, blender, hand egg beater, potato masher, etc. I still love finding retro kitchen stuff. Also, I laughed so hard when that egg went flying...thx for not editing it out!
When I was in Japan I loved the vending machines with hot coffee in the can. I also fell in love with the restaurant with the rotating sushi counter. Miss it!
I think it's amazing how she can take any ordinary simple resapy (sorry i don't know how that's spelt) and tern it into a fun and informative video. It's really, really good.
Wow. I'm a child of the 70's and that brown coloured apparatus takes me back! I do remember many types of these gadgets to make life "easier" and it involved batch cooking. Yes we could've simply cooked food in a pan or pot, but why bother when you've got gadgets. We had a hot dog cooker that cooked 6 hot dogs at a time (small size hot dogs not jumbo) and you basically skewered both ends into these spikes on a tray. The tray then was inserted into a thick plastic and metal like contraption, plugged in and it just started cooking.
Maybe this is childish but I giggled when Emmy said “this machine just popped off” because in Australia a pop-off is a what kids call a fart. To say “you popped off” is to say you farted. The more you know.
I’ve been an Aussie citizen for like 25 years but some of this still gets me. I once announced to the host of a party that I was going to pop off (leave) and everyone had a polite chuckle at me :p
One of my hens growing up had to be separated because she kept cracking the eggs (Unfertilized) open and eating the insides. She continued to eat her own eggs until she stopped laying. It still freaks me out a little when I think about how I caught her doing it.....
I have one of those except it's square and it's also a tiny electric skillet! The egg master 3000 or something like that... it heats up pizza really nicely
Emmy I have a couple of things to bring up... 1. I am so glad you talked about an older egg being easier to peel. No one ever believes me 🤦♀️ 2. As a girl we had one of those egg cookers. My Mom bought it for my Dad for Christmas, so he could make his own poached eggs in the morning for breakfast. She didn't want to do it anymore because he had to be to work at 4:30 in the morning. It was to hard on her then trying to get us up for school and off for work too. Anyway the machine didn't last long, only a couple of years. Bah humbug! 3. I use a cheese shredder to cut my eggs. The kind that you lay across the bowl is what I like but you can use a box shredder too. It makes it so fast, easy and no mess. Love you channel! I'm always learning new things and it's entertaining. The Japanese egg salad must be on the sweet side. When I make mine, I actually prefer mine to be more savory, I even like to add a little Creole seasoning to give it more of a kick! When you left mustard out, I was actually baffled lol. But to be fair, my egg salad is pretty much the same as my deviled eggs but smushed up :b If u wanna give it a shot: Get ur eggs all boiled and cut up, add just enough mayo for them to start sticking together. After that, you add mustard. I like to add a little at a time, tasting as I go- perhaps the same amount if not more as the mayo. Once it's got a nice tang, I add some salt, some garlic powder, and finish it all off with just a gentle shake of Creole seasoning. It'll add a tiny bit of spice to an otherwise really savory egg salad! Sorry there's not any real specific measurements, but we all know that the best recipes are based on what you taste as you go along!

Oh and by the way I'm sorry about the cast iron skillet you lost. I'd be pretty hurt if that were to happen with any of the sentimental things that have been passed on to me.
I tried the egg salad today, with the Japanese mayonnaise. I added sweet pickle relish. Very good, the mayo tastes as if it has a bit of mustard in it. A little more tart than regular mayo.
Emmy I recently bought the kewpie mayo from a japanese store in my city and it is so frikin yummy and very different to American mayo way more rich and almost kinda tangy and i LOVE IT (just thought you should know)

I was only in Japan for about three weeks in 2018, but I think about those Konbini sandwiches ever. single. day. Honestly everything inside a konbini was sooooooo delicious. UGH. I'm so HUNGRY.
My mom called them Deviled Egg Sandwiches, I guess because she used mustard as well as Mayo, and a little paprika. She also added a little sweet pickle relish. All this meant she cut back on the amount of Mayo so it didn’t get soupy. It is delicious. I can’t imagine just mayonnaise, but I will give it a try with an open mind. Love your channel! ❤❤❤
My parents have an egg cooker like that from the 90s. The only difference is it does not have an on/off button but a buzzer instead to alert you to when it is done and to turn it off. The center part of the lid on it is for measuring the right amount of water. I was told to pierce the big end of the egg on the spike and then place it with that hole facing up, small end of the egg down.
I would suggest to separate the egg whites and the egg yolks. Cut the egg whites in small cubes, and mix and stir the egg yolks to a smooth consistency, add the mayo and pepper to the yolk mixture and mix to a unison consistency again, then add the chopped up egg whites, and stir carefully. This gives the egg salad the smooth creamy texture with the still whole cubes of egg white in their for a little bite. This is how I recall Japanese egg salad Sando. I like slicing one egg and placing the white slices on top of the egg salad in the sandwich. I think it adds good visual texture to the sando. This is definitely one of my favorite conbini foods.
Egg sandwiches are the only food I have consistently loved my entire solid foods eating life. It was probably one of the first foods I ever ate because my great grandmother always made them for me. I'll never give up my egg sandwiches.
I was a picky eater as a kid. I loved poached eggs with toast. It never had an egg salad sandwich until about 10 years ago, I was like 28. During an early morning meeting at the shop I worked for, an older lady we worked with brought a big bag of fresh egg salad sandwiches for us all. Just plain, like in the video, on warm toasted bread. It was delicious! I could so go for one right now. 🙂
Holy smokes I remember my parents having that same egg cooker, and it lasted forever. That cooker was amazing and made egg cooking easy. It makes me smile because my dad (RIP) loved poached eggs, and my mom would make the poached eggs using that machine.

I found a fantastic way to peel eggs. I get perfect eggs almost every single time. Tap the small end of the egg on a soft cloth until the cracks. Then, peel it under a small stream of water. The membrane peels off with the shell. They turned out beautifully
6 eggs diced Half a small onion, diced finely Mayo Tiny teaspoon mustard Tiny squirt lemon juice Tiny squirt soy sauce Pinch sugar A little salt and pepper to taste Dried parsley chopped finely. Absolutely beautiful, scrumdiddlyumptious, delicious egg salad with lots of flavour!

I have an egg cooker and it’s a biiiig time saver and so simple, even I can cook with it. It also turns itself off which prevents my eggs from burning and that way I can just make eggs while I get ready in the morning!👍👍
I use a teaspoon as to get under the shell to peal the eggs from under the shell. It's easier and less messy a less damaging to the structure of the egg, then a finger can from the outside. Just a technique that came to me. Plus, the teaspoon takes the residual heat instead of your fingers, which also makes things a lot easier, faster and more pleasant.
I was supposed to be in Japan this month and I desperately miss Lawson and Family mart. Tomago Sando was my breakfast every morning. There was something so fun about visiting the family mart near my hotel and get a fresh sandwich before everything else opened up in kyoto. So peaceful.
I think the crust and the end pieces of a loaf of bread is my favorite. The soft, fluffy center is nice but the crust and all the browned parts makes me fuller somehow. Glad Emmy is not gonna put those to waste and besides, they got chicken anyway so nothing really goes to waste.
I was taught to pierce the egg shell in home economics class because you want to eliminate the little flat area that is created by the air bubble inside the egg. The pierced shell also allows the egg to expand without cracking, I would have placed the pierced side up while steaming to allow the air to escape more easily. I always pierce egg shells when I'm making deviled eggs so each egg is a perfect oval.

In the UK they're around the equivalent of $1.50 - $2.00. They're in the lower priced range, with plain ham or cheese.

Mmm. I always add apple cider vinegar to mine for that tangy kick.
Japanese mayo has a bit more vinegar to it, and that makes a nice addition. This will work as well, thanks for the tip!

“Like it never happened...” is a familiar quote in my kitchen! I have to say it kind of stung when you said the egg cooker was almost 50 (I was born in ‘71), but I loved seeing the cooker...in college I bought one at the thrift store for $1.00, mine had a metal lid, it was such a good score, and I used it all the time. My parents gave me all their kitchen wedding gifts from 1960, toaster, blender, hand egg beater, potato masher, etc. I still love finding retro kitchen stuff. Also, I laughed so hard when that egg went flying...thx for not editing it out!
When I was in Japan I loved the vending machines with hot coffee in the can. I also fell in love with the restaurant with the rotating sushi counter. Miss it!
I think it's amazing how she can take any ordinary simple resapy (sorry i don't know how that's spelt) and tern it into a fun and informative video. It's really, really good.

Wow. I'm a child of the 70's and that brown coloured apparatus takes me back! I do remember many types of these gadgets to make life "easier" and it involved batch cooking. Yes we could've simply cooked food in a pan or pot, but why bother when you've got gadgets. We had a hot dog cooker that cooked 6 hot dogs at a time (small size hot dogs not jumbo) and you basically skewered both ends into these spikes on a tray. The tray then was inserted into a thick plastic and metal like contraption, plugged in and it just started cooking.
Maybe this is childish but I giggled when Emmy said “this machine just popped off” because in Australia a pop-off is a what kids call a fart. To say “you popped off” is to say you farted.

In fairness.. egg salad smells the same going in as coming out... so.. yeah... popped off either way..

One of my hens growing up had to be separated because she kept cracking the eggs (Unfertilized) open and eating the insides. She continued to eat her own eggs until she stopped laying. It still freaks me out a little when I think about how I caught her doing it.....

My parents got an egg cooker just like this as a wedding gift. They still use it! It actually is pretty convenient for making boiled eggs.
I have one of those except it's square and it's also a tiny electric skillet! The egg master 3000 or something like that... it heats up pizza really nicely
Emmy I have a couple of things to bring up...
1. I am so glad you talked about an older egg being easier to peel. No one ever believes me 🤦♀️
2. As a girl we had one of those egg cookers. My Mom bought it for my Dad for Christmas, so he could make his own poached eggs in the morning for breakfast. She didn't want to do it anymore because he had to be to work at 4:30 in the morning. It was to hard on her then trying to get us up for school and off for work too. Anyway the machine didn't last long, only a couple of years. Bah humbug!
3. I use a cheese shredder to cut my eggs. The kind that you lay across the bowl is what I like but you can use a box shredder too. It makes it so fast, easy and no mess.

The Japanese egg salad must be on the sweet side. When I make mine, I actually prefer mine to be more savory, I even like to add a little Creole seasoning to give it more of a kick! When you left mustard out, I was actually baffled lol. But to be fair, my egg salad is pretty much the same as my deviled eggs but smushed up :b
If u wanna give it a shot:
Get ur eggs all boiled and cut up, add just enough mayo for them to start sticking together. After that, you add mustard. I like to add a little at a time, tasting as I go- perhaps the same amount if not more as the mayo.
Once it's got a nice tang, I add some salt, some garlic powder, and finish it all off with just a gentle shake of Creole seasoning. It'll add a tiny bit of spice to an otherwise really savory egg salad!
Sorry there's not any real specific measurements, but we all know that the best recipes are based on what you taste as you go along!
Thats not far off from how I make mine , and was SHOOK the other week when my younger brother told me none of his friends grew up on deviled egg sandwiches. Like? How did yall survive 😂

I used to borrow it from my aunt all the time when I was little n finally she gave it to me. She told me how proud my great grandma would've been to see me using it with love. It's so precious to me. Oh and by the way I'm sorry about the cast iron skillet you lost. I'd be pretty hurt if that were to happen with any of the sentimental things that have been passed on to me.

I tried the egg salad today, with the Japanese mayonnaise. I added sweet pickle relish. Very good, the mayo tastes as if it has a bit of mustard in it. A little more tart than regular mayo.
Emmy I recently bought the kewpie mayo from a japanese store in my city and it is so frikin yummy and very different to American mayo way more rich and almost kinda tangy and i LOVE IT (just thought you should know)

My mom called them Deviled Egg Sandwiches, I guess because she used mustard as well as Mayo, and a little paprika. She also added a little sweet pickle relish. All this meant she cut back on the amount of Mayo so it didn’t get soupy. It is delicious. I can’t imagine just mayonnaise, but I will give it a try with an open mind. Love your channel! ❤❤❤
I like to use a pastry cutter for my eggs when I make egg salad, it’s quicker than a fork and they are more evenly cut.

My parents have an egg cooker like that from the 90s. The only difference is it does not have an on/off button but a buzzer instead to alert you to when it is done and to turn it off. The center part of the lid on it is for measuring the right amount of water. I was told to pierce the big end of the egg on the spike and then place it with that hole facing up, small end of the egg down.

I would suggest to separate the egg whites and the egg yolks. Cut the egg whites in small cubes, and mix and stir the egg yolks to a smooth consistency, add the mayo and pepper to the yolk mixture and mix to a unison consistency again, then add the chopped up egg whites, and stir carefully. This gives the egg salad the smooth creamy texture with the still whole cubes of egg white in their for a little bite. This is how I recall Japanese egg salad Sando. I like slicing one egg and placing the white slices on top of the egg salad in the sandwich. I think it adds good visual texture to the sando. This is definitely one of my favorite conbini foods.

Egg sandwiches are the only food I have consistently loved my entire solid foods eating life. It was probably one of the first foods I ever ate because my great grandmother always made them for me. I'll never give up my egg sandwiches.

I was the same way. LOVED egg salad sandwiches as a kid and into my early 20s but eventually I got sick of them for some reason.
I was a picky eater as a kid. I loved poached eggs with toast. It never had an egg salad sandwich until about 10 years ago, I was like 28.
During an early morning meeting at the shop I worked for, an older lady we worked with brought a big bag of fresh egg salad sandwiches for us all. Just plain, like in the video, on warm toasted bread.
It was delicious! I could so go for one right now. 🙂

Holy smokes I remember my parents having that same egg cooker, and it lasted forever. That cooker was amazing and made egg cooking easy. It makes me smile because my dad (RIP) loved poached eggs, and my mom would make the poached eggs using that machine.

See, watching this has made me realize that I love the name, but one of my boyfriend's best friends is named Emily, and I don't know if that would be weird because I barely know her.
I found a fantastic way to peel eggs. I get perfect eggs almost every single time. Tap the small end of the egg on a soft cloth until the cracks. Then, peel it under a small stream of water. The membrane peels off with the shell. They turned out beautifully

I have an egg cooker and it’s a biiiig time saver and so simple, even I can cook with it. It also turns itself off which prevents my eggs from burning and that way I can just make eggs while I get ready in the morning!👍👍

I use a teaspoon as to get under the shell to peal the eggs from under the shell. It's easier and less messy a less damaging to the structure of the egg, then a finger can from the outside. Just a technique that came to me.
Plus, the teaspoon takes the residual heat instead of your fingers, which also makes things a lot easier, faster and more pleasant.
Ah man, I miss eating eggs! Nowadays they just taste like acid reflux to me, and it makes them unpalatable 🤢🤮

I was supposed to be in Japan this month and I desperately miss Lawson and Family mart. Tomago Sando was my breakfast every morning. There was something so fun about visiting the family mart near my hotel and get a fresh sandwich before everything else opened up in kyoto. So peaceful.
I think the crust and the end pieces of a loaf of bread is my favorite. The soft, fluffy center is nice but the crust and all the browned parts makes me fuller somehow.
Glad Emmy is not gonna put those to waste and besides, they got chicken anyway so nothing really goes to waste.
And I hate crusts and heels. You can have mine. 😄 Between the two of us we'll lick the platter clean!

I was taught to pierce the egg shell in home economics class because you want to eliminate the little flat area that is created by the air bubble inside the egg. The pierced shell also allows the egg to expand without cracking, I would have placed the pierced side up while steaming to allow the air to escape more easily. I always pierce egg shells when I'm making deviled eggs so each egg is a perfect oval.
