    Hi Ernest Yeap, I learn a secret method to make the pickled fruit very crispy and crunchy by my late mom. We add in some salt and sugar, not too much salt as we do not wash them after stand for 1 hr , squeeze out some of the juice only. Then fill the bottle.
    The brine was add in 1: 1 : 1, water : sugar : vinegar. Boil the water with sugar when the sugar has melted, then add in the cuka and chili, once boils off the fire and cool it.

      This is a base recipe, so you could tweak the amount of ingredients to your taste on how sweet, spicy or sour you want it to be if you’re going to make it the next time. 😄

    Can i use all white sugar if i dont have brown sugar ?

      Sure, you could substitute the brown sugar with white sugar.

      郑慧莲 You’re most welcome. Yeah, you shouldn’t use papaya that is too ripe or the the pickled papaya will become too soggy. Mid ripe papaya is the best for making pickles as it still retain it’s crunchiness. And thank you for watching. Really appreciate it.😊
