    I'd imagine they were pretty moist before heating them in the microwave so having essentially separated the the water from the food as steam, but not all of it escaped and essentially became condensation that was pressed out by the sausage stuffer

    I would say the water is coming from the casing when you put it on the tube, the casing is soaked in water so there is water trapped inside and when you put the casing on it forces it into the tube then the sausage pushes it back out

    Fun fact about British cuisine: It's foreign food. Seriously. Back when cookery books started first getting written, with trade being so important to England and it being relatively wealthy, it was more fashionable to have foreign foods, and an array of spices you could add yourself. In the rest of Europe, it became more fashionable to adapt the dishes into a local variant using the new spices and ingredients. Look at how many dishes there are that are basically the same but called different things with the only variations being ingredients local to the country it came from. Most countries have some variant of chicken chasseur.

    Funnily enough Mr Sausage you've actually created something that almost exists, 'fruit pudding' in Scotland is a sort of clootie dumpling mixture so has sultanas and is sweet, also with some of the spices that are found in Christmas Pudding. It's pumped into casings and steamed, you then fry individual slices of it for breakfast.
    From Google: "a mixture of wheat or oatmeal flour or breadcrumbs, beef suet, brown sugar, currants, raisins, sultanas, salt and cinnamon, formed into the shape of a large sausage"

    Anyway you can use the little holes on your casing filler to mount it to a table, or to a spare cutting board. It'll make the crank way easier to turn, and also give you a better target when you're loading it up.

    Actually, I might have an explanation for the figgy pudding water. Because the figgy pudding was still warm, it was probably steaming, even if you couldn't see it. When you put it into the sausage press, either that (or the humidity in the air) condensed against the cold metal sides of the press. when squeezed hard, figgy condensation pushed out
