Those would be called enmoladas, Wich are basically enchiladas but with mole instead of the regular sauce
(And they would normally be topped with sour cream, fresh cheese and pickled red onions)
But very good recipe overall

It's one of my favorites after chile relleno. I prefer thinner and less sauce. The contrast between the blander shredded chicken and the tortilla as they absorb the extremely flavorful mole (which would be too much on it's own) makes this a very tasty dish! If you can find it at the supermarket in jarred form remember that it is a concentrate unless otherwise indicated and a little goes a long way but is perfectly acceptable to use

Mole has a lot of flavor, very strong, spicy and sweet, doesn't need salsa on top... nobody in Mexico eats it topped with salsa, just sesame seeds and/or almonds. Using salsa with jalapeños on mole will ensure most people a trip to the bathroom and the need to eat a whole box of antiacid.
These are street style Enchis. Enchiladas are always made with CORN tortillas. How do I know? I was born in Mexico and Mole is my favorite food. Cheers to Sir Patrick!

At the Deep (sea life centre) in hull in the uk you walk through a section of planets and they light up with sounds from the ocean and it has sir Patrick talking about earth and the ocean.
Dripping sandwiches are the best hehehe.. maybe a little marmite on them if you don't have any savoury from the base of the dripping..
