  • This prawn noodles are Roland's favourite. We always have this at least once every 2 months because he's always craving for it. Our recipe is very different from what you get outside at the prawn noodle stall in Singapore because we included five spice into the recipe. I think this is better than what we get out because the soup is full of body and the five spice adds a very different twist to the dish.

    Ingredients
    Serves 10
    Ingredients for prawn broth
    -------------------------
    7L water
    1.2 kg chicken feet or pork ribs
    1kg prawn head
    3 bulbs of garlic
    20g rock sugar
    3 pieces cinnamon bark
    2 pieces star anise
    6 - 7 pieces clove
    1 tablespoon white peppercorn
    2 teaspoons salt
    Ingredients with noodles
    -------------------------
    20 pieces of prawns
    300g sliced marinated pork
    3 packets of yellow noodles
    300g fish cake
    any vegetables you like
    Marinate for Sliced Pork
    -------------------------
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 teaspoon cornstarch powder
    Dry noodles base mix (for 1 noodle portion)
    -------------------------
    2 teaspoons of basic noodle mix (fry 1 tablespoon sesame seed oil, 4 tablespoons oyster sauce and 1 teaspoon of sugar together)
    1 - 1.5 teaspoons of sambal chilli paste
    1 - 2 teaspoons pork lard oil

    This is your 1st recipe that I tried. It was super good! Since pandemic we can’t fly to Singapore to do many things, and eating this noodle soup give some relieve. Feels like being back to Sing for a while. Have come often to your channel since then to get yummy food references.     Thank you for this recipe! Love this because I also have an Indon helper whom we of course want to include in our meals. Why do we not need to blanch the chicken feet first? Will it not be too gamey and result in more scum produced in the broth?

      If you keep the crispy lard in an airtight container, they should remain crispy for about 4 - 5 days. Our stock can rarely last that long though. Hahahaha

    Thanks for uploading. The Penang version of this noodles include sun-dried or air-dried onion slices which are then fried. Add them just before you eat the noodles. Best regards.

      Hi defunct32. So sorry for our late reply. We got it from a market in Vietnam but we’ve seen some shops in HDB estates selling it too. You can look out for it whenever you visit one of those stores selling cookware.

    Roland, there is a cuttle fish look-alike that is used to make the tastiest soup you ever tasted. Chinese call it Tiew Phien. All you need is about 5 or 6 boiled like ikan bilis. Have you heard of it?

    How many serving portion for 7L soup ?

    my soup ended so black!! would u know why? i bought frozen prawn heads, fried them first then added them into the soup. is it cus i didnt wash the prawn heads? or that i didnt fry them till completely dry?

    Can you know where can we buy just the prawn head in Singapore. Does prawn head matter ?

      Hi Janson, you can check with your neighbourhood fishmonger to see if they sell it. We usually keep the prawn heads if we only need the prawn and not the heads in our dishes. When you do this, you don't have to wash the heads. Just remove it from the prawns and then put them in plastic bags. Freeze the heads in small portions per bag so that you can just retrieve whatever you need whenever needed. Hope this helps..

    can i ask what can you do with the boiled chicken feet? that's alot of chicken feet to throw away after using it to make soup

    If using Pork Ribs do I need to simmer longer like 2 hrs? Also need to Blanch right?

      Sure you can use pork ribs. Would be great too. Yes please blanch and wash first before use. You can boil for about 1 hour. Of course the longer the better.

      Spice N' Pans same quantity of Pork Ribs? I'll prob cut down the recipe quantity by half since there are only 4 of us. So half the ingredients but same method & cooking time? Good that u are aware that u have Muslim Followers who are willing to attempt this Recipe. I think the Prawn Chicken Stock is similar to what we have in Malaysia called Ipoh Hor Fun Noodles only minus the 5 Spice but we also use Rock sugar too & similar method. We add in ginger & spring onions instead. Our Penang Hokkien Prawn Mee Soup is slightly different, has a Spice Paste simmered in the Soup. Sometimes we add Pork Ribs too. Both versions are nice.

      I tried ytd but screw up whats left of the little prawny taste with too much dark soy sauce. All that effort amount to nthg...haix....maybe cooking isnt for me...stick to instant n fried rice....😂😂😂
