I got to the Record Creation and Update Rule part but found out that there no options to choose in the Activity Type to Monitor dropdown 8:12 I'm unable to save the new rule!. I'm pretty sure I'm following the instructions correctly. I have created these rules in the legacy interface but I'm trying the method in this because with the new wave the legacy rules stopped working.
Hi Johnny, if the rules already exist in the legacy application you can migrate them to the UI: docs.microsoft.com/en-us/dynamics365/customer-service/migrate-automatic-record-creation-and-sla-agreements

Can we setup dynamics without creating a new shared mailbox? Could we use an existing organisation shared mailbox?

You need to turn off administration mode of the instance. docs.microsoft.com/en-us/power-platform/admin/admin-mode#set-administration-mode
