I do 18g in, 36 out over 27-30 seconds. Try to then dry the grounds fully and re weigh. You’ll see how much you actually extract from the bean. I’m getting about 2-3 grams. Take care
I live in Bournemouth and in honour of you being in the area on Friday, I created a batch of dough using your recipe! I don't have a pizza oven so I used the pan and grill method :) When I buy a house with a garden (soon!) will be getting a Gozney Arc for the garden :D Also used your method of preparing mozarella as I've got a food prep gadget similar to yours and it's a brilliant technique! I love the foot print of that weighing scales, it's so small!! I also thought the manual espresso maker is epic, but I have an aeropress and it's just way easier lol. I really don't understand Yeast and dough timing. I use PizzaApp if you've heard of it and I just don't get 'RT Leavening' i see you mention 1g of fresh yeast for 1kg of flour. If I make dough at 9pm like you and I want my Pizza's to cook at 6 or 7pm the next day, how much yeast do I use. Is that 22 hour leavening? I usually bulk the dough over night and ball up during the afternoon on the next day. Think that's the hardest part when it comes to making dough!
This is exactly why we’ve just ordered a Roccbox, to use at home and in the campervan. We often use a fire pit of bbq for cooking but you just can’t beat a proper pizza! Especially when you can cook other dishes in it too. Do you think the cover is essential for travelling or will the supplied handle suffice?

Do you have a table showing ferment times vs CY/ADY/IDY yeast? 2. Did you bulk ferment for 12h then ball up for the last 12h? 3. Why do you always use CY yeast? I would of thought IDY yeast has a better shelf life stability and is readily more available around the world.
I’ll touch on all this in my dough video that’s coming. But fresh (cY). Is actually way more reliable. With instant yeast you can never tell if it’s bad or good. Also. 1kg of fresh yeast costs me about £2.50

IDY is readily available at the local store (£3.00 for 500gm). CY has to be couriered from the capital and is £6.00 for 500gm + delivery). Given what I have read about the shelf life of CY and the climate here, I would always use IDY. It's an academic point really because there is a standard calculation to convert CY to IDY. (IDY=CY/2.8) hence the question about the chart you use to calculate the CY to use against temperature vs ferment time. ❤
