Only Thai durians, particularly big durians like monthong or chanee are cut that way because they are cut about five days before maturity. They are hard to peel open. Malaysian durians are mature durians that drop from trees and can be opened easily with some practices.

You follow the natural line. It's not that hard for someone who has cut one before.
We eat durian once or twice a year, too expensive here to eat more, and never cut through the seeds either.
That's not to take away from his technique though, it would have taken us half an hour to do what he does in under 2 minutes.

Looking those fruits looks beautiful and unique. I smelled it once but I never tried it. The smell was so strong that could lead me to a strong migraine reaction and head inflammation.

You can’t use your method to open Durian in Thailand because it’s too hard to do like that. Thai people don’t like too ripe, too strong smell too soft texture durian like what Malaysian/Indonesian/Singaporian do so that’s why we don’t let it fully ripe. It has to be crispy outside and soft inside, if it’s too young or too crispy then no taste, if it’s too ripe then it’s too strong smell and taste that we don’t like, to find the perfect time is using quite skill.
Btw pls look at the mountain of Durian, do you think this people don’t know what is the best way to open them? Like you know more than people who have experience to due with mountain of durian?

All I can say is that in most hotels in Bali bringing durian to the hotel is forbidden. The smell is extremely pungent and not to everybody taste
