My creamy potato bake recipe is loosely based on this one: www.bestrecipe...
My modifications include replacing the bacon with chopped mushrooms that I saute in butter with some salt and pepper to taste. I also don't usually add parsley, but will add chives, dill or spring onion if I have them on hand or I remember, which I forgot today and it was still delicious!

I also modify this one and omit the rhubarb and replace with whatever fruit I have on hand. I have made it with diced apples, raspberries and today, with frozen blueberries. I increase the baking time when using raspberries and blueberries and check on the sponge every 5 minutes after the recommended 20-22 minute baking time in the recipe to make sure a toothpick comes out clean, and it doesn't overcook. I think it ended up approximately 30-35 minutes of baking time today.
