I always thought I stepped up my nutrition after going plant based until watching this conversation. I went plant based due to the information I learned in med school. I still continued to eat highly processed foods like chips & cookies till now. Love learning something new. Thank you for sharing this very enlightening conversation between you & Dr B. I’m needing to make a Costco run & removed potato chips off my list thanks to the information provided in this video.
Cutting out the ultra processed junk is the reason the keto people get a health boost. They stop eating that too. Once a month a potatoe chips during a movie is alright, if you aren't diabetic or suffering for heart disease or high bloodpressure imo.
My favorite whole food snack is air popped popcorn. The poppers are super cheap and last forever and organic popping kernels are surprisingly affordable. No oil/fat is necessary and I don’t usually season it, because I like the natural flavor. However, sometimes I’ll spray on a little low sodium soy sauce and sprinkle it with some nutritional yeast. It’s so tasty and the sky’s the limit with spices like cinnamon or cayenne! My second favorite snack is making homemade tortilla ‘chips’ by toasting corn tortillas in the oven, breaking them up and serving them along side a combination of humus and salsa. So delicious AND nutritious!!

I gave up processed foods 4 years ago and gained No more loose teeth, bleeding gums, sensitive teeth, blocked sinuses, mouth breathing, left eye twitches, heartburn, calf cramps, yellow stool, blood in stool, edema below the knees, pain in feet when walking, I can stay out in the sun longer without burning or peeling, lower back has recently started feeling stronger.

How neat. I have been married to my EHarmony husband for almost 17 years. However he won’t go WFPL with me. But that’s his decision & I respect his wishes just as he respects mine. My heart disease has been almost removed since I have decided to eat this way. No test have been done since August, but my cholesterol levels then are lower than ever. I am on a medication called Praluent & the Lipidologist says if I weren’t on the medication, my cholesterol levels would go back up. Who knows. 🤷🏻♀️. Thank you for sharing your knowledge with us all.

Potato Chips: I had a small cheap mandolin slicer that sliced small potatoes thin enough to make chips. I baked in oven on top of parchment paper. There is no recipe it was all experimenting until I stopped burning them. This was years ago and no longer have a craving for chips.
Dr B I found your take on how carnivore diet through elimination of ultraprocessed foods was a positive. I agree, and also agree about potential long term cardiovascular risk given high LDL can cause soft plaque buildup after 30+ years and greatly raise risk of a major CVD event or paralyzing stroke. Also, I believe and you have mentioned this in other podcasts. And that is how eating a all canivore diet can change your gut microbes for the worse, by giving rise to those inflammatory species that have been associated with colorectal cancer, IBS, Crohn’s Disease, etc., I am not vegan or carnivore, but more a Mediterranean type omnivore. I would never roll the dice by going hardcore carnivore as the potential long term risks far outweigh any potential short term benefts, especially given my genetic predisposition to heart disease. As I am a kidney stone former, I have to be more cautious about sticking to low oxylate vegetables. That makes it more challenging for me to diversify my vegetable intake. However, I am still committed to optimize my gut microbial health, and that is my 2024 New Year’s Resolution. The strategy I am employing is including cultured/fermented vegetables using lower oxylate veggies. From what I have read fermentation itself can reduce oxylate. And I am also replacing milk with kefir smoothies made with berries, resistant starch, and/or ground flaxseed, oat fibre. For what it’s worth, I have started having awesome bowel movements since doing this. But the stool looks like a nicely formed big Bavarian Sausage vs a small breakfast sausage lol Thanks for all the great info Dr B
lol, when they first asked the question about a chip replacement the first thing that came to mind was a hummus and veggie plate with garlic and dill. Carrots, radish, cauliflower, cucumber, pine nuts, toasted pita. So good! a few figs on the side for some sweetness.
Sometimes stress makes people reach for easily accessible processed snacks. A couple of strategies is to disentangle oneself from stressful situations and include a regular stress-reducing activity in one's life such as nature walks, hiking, etc.
My newish crunchy snack: well toasted Ezekiel Sprouted Grain bread, topped with roasted garlic hummus. Hummus can be addictive though, it is so delicious. Try to find one that is relatively low sodium. The garlic hummus I buy is brand Marketside from Wal Mart grocery, with 80 mg sodium per serving (2 tbsp), which easily covers the bread slice, which itself has 75 mg sodium per slice and is one of the lowest sodium whole grain/wheat breads I've found.
You can easily make your own oil free hummus. I have been making this and putting it on toasted Ezekier bread and putting lettuce, tomato, cucumber slices and red onion for a sandwich.
Cute - the "Minister of Microbiome". Honestly, I have nearly entirely cut out "junk foods" with the exception of good dark chocolate. Honestly, if it were healthy to live on nothing but extra sharp cheddar cheese, dark chocolate, and crusty and chewy bread, I would eat these things all day. But alas, while man can't live on bread alone, to use that hackneyed paraphrased quote, it's true we need our fruits and vegetables and whole grains, legumes, etc. and eat them in their least processed and most healthy forms and cut out the junk foods, the oils, etc. I've been trying to live a more plant-based diet since the beginning of 2022 and it's been going well. But just like my keeping a kosher diet has limited where I can eat outside my home, so has been keeping a plant-based and healthier diet because most of the homes I visit do not. Most keep a very heavily meat-based diet, and eat highly processed foods. If I'm a guest in their homes, I eat what's in front of me if it's kosher, but I limit my intake. I definitely notice a difference in how I feel after consuming different foods, not the least of which is the frequency and intensity of acid-reflux (GERD), flatulence, bloatedness, repeating of foods, excretion, etc. My basic rule on consuming foods like the rest of my life is trying to be is "Less is More" -- the least processed, the least complicated. I agree with Dr. B. If you can't make it at home with normal store bought ingredients, then don't eat it. P.S. On the "potato chip question," as Dr. B mentioned, fat, salt, and crunchiness. I admit that I will once in a blue moon buy some sort of potato chips or popcorn from the "healthy" aisle. But I don't do it regularly. If I had to make at home a choice, I'd make homemade "chips" of potatoes and sweet potatoes in the oven with baking and mostly garlic and smoked paprika. I nearly never cook with salt of any kind unless something is so incredibly flavorless without other herbs and spices and fruits and veggies. But yes, absolutely roasting or baking helps with the crispy crunchy nature. I don't own an air fryer, but I do own a plain toaster. I also have to mind the nuts too. I certainly enjoy my hummus with carrots and celery and apples.
Im brazilian and actually what happens is that this kind of foods are cheaper and easier to grab on the go than rice and beans(which os a staple here). So, its not about that brazil is getting more afluent but its a reflection of how the food industry works, the superprocessed are cheaper than fruits and vegetables. Yes, Rachel. This is so sad. I have family in Peru and I've heard the same there. Super sad story: Quinoa is native to the highlands of Peru and it used to be a food that the indigenous people ate a lot of BUT it has become so popular around the world that the price has shot up so much that the locals cannot afford it and eat junk food instead.

The ingredients aren’t bad but the process of making them is what I’m not so sure of. For some reason I feel guilty for eating them so I’m thinking they must not be good for you!

So you are saying that the intake for Americans of ingredients distinguishing ultraprocessed foods from processed foods such as the emulsifiers, additives, binders etc, is 2800-8500mg per day? (60% of a 2500 kcal diet => 1500 kcal. Average calorie density of UP foods 100g per 350kcal => 430g of UP foods. 2% maximum content regarded as 'safe dose' for those ingredients => 8500mg)
I ate that junk from a very early age. It was always around. It puzzles me how ignorant our parents were in the 50’s and beyond. Just because this junk is manufactured, nobody holds a gun to your head to buy it or feed it to your kids.
Your resentment is understandable, but it doesn't take into account the effect of more widespread knowledge these days. In the past most people didn’t have access to the information, they relied totally on the professionals to let them know what to eat, and only a few of those knew the best health secrets. Manufacturers had full reign and nobody had the scientific studies yet to stand up to them. People in the 50s believed what they were told, they trusted the big guys because it looked like they had the answers to a better life. I think we are lucky now to have so much more information to go on and more accountability for what is made and what is advertised. I guess also we won't be blaming ourselves for what we don’t know yet. If we look back in 30 years time we'll probably raise our eyebrows at some of the things we do today. It's ok to learn new things.
I have been drinking homemade kefir made with whole milk several years. I recently have gone whole food plant based about a month. I am trying to evaluate if I want to give up kefir. What are your thoughts on this fermented food?
Unfortunately the fermentation process doesn't remove any of the adverse health issues with milk. I make my own yoghurt now from oat or soy milk (no additives, the bacteria don't like those.., and i agree :)).
I really didn't eat oil as a kid, but I tried doing whole food these days and I just can't get the nutrients I need and I fall ill. When I eat the plant-based junk foods like beyond meat, etc. I feel better. What am I doing wrong?
When you feel ill, do you feel bloated? If so, perhaps you don’t have the gut microbes needed to break down the fiber. You may try introducing the Whole Foods gradually.
@@allee3476 It's more like allergenic and mental issues. Like I'll sneeze more (due to the lack of oil) and not feel well like my brain's chemicals have been emptied. Maybe it's a dopamine detox or something. Plus I'm colder and less energetic due to the lack of oils too.

PCRM offers telemedicine, not sure if you want to consult with one of their physicians. Have you lost a lot of weight? I ask because when I first switched to a whole food plant based vegan lifestyle about five years ago, I lost 45 pounds within a year and I felt cold easily but, somehow, I have adjusted to it now. Anyway, I’d seek an advice of a plant based doctor if I were you.
@@allee3476 that also accompanies it. It's greens. Actually it's a lot of things. I don't really see many having answers for it. I just stopped doing WFPB because the oil keeps me from being sensitive to foods I eat.
I mean I do - we'd have to think about the microbes and how they interact with each other - as they're not going to be the same. A UTI infection is from e coli, while the microbiome would have staph aureus, but it can get a candida infection. So if you look up research studies about the competition and implantation of microbes battling each other for a spot in and on the body, then you'd know how they interact. The reason is sometimes if you get one infection, you don't get another - due to the one bumping out the other. I would say what's more important are the chemicals created - like butyrate - which decreases e coli levels. Staph and e coli seem to work together, being some of the most prevalent of infections, so they get impacted by similar treatments. See "Prevention of Staphylococcus aureus Infections by Glycoprotein Vaccines Synthesized in Escherichia coli".
Can some microbes eat good and bad foods. Can different microbes eat the same foods as other ones? So can a bad microbe eat a good food and do good and vice versa?
I guess it depends on what you mean by bad food...most microbes eat some sort of a plant product (fiber, etc.).... What would be an example of bad food?
Yes they can. First. Bacteria dont eat food like we do, they absorb different nutrients through their cell walls with the help of enzymes and transsporter protein. In junk food and healthy food there are nutrients that feed both kind of bacteria. But healty food (rich in fiber, low in animal protein, fat and and refined foods, will benefit your gut microbiome by feeding the good bacteria more than the bad. So the ratio shifts towards an healthier, more divers microbiome. And vice versa.
Just give me the good old days when people ate real food and lived well into their 90s with good health - no diabetes, no heart attacks. Bacon and eggs for breakfast, potatoes fried in lard, homemade bread with plenty of real butter, homemade desserts with every meal, full fat ice cream, vegetables from the garden, and homegrown beef and chicken. The only thing I don’t remember my grandparents eating is lamb and cheese, but they may have and I just don’t remember. Sometimes I think the best thing to do is forget all of these extreme diets and just go back to the basics.

Replace chips with wasa bread. Crunchy and somewhat salty. If fat is what appeals, I recommend hummus spread upon the bread.
Replace with carrot celery capsicum sticks with a natural hummus. Loved the idea of coloured carrots.

But just like my keeping a kosher diet has limited where I can eat outside my home, so has been keeping a plant-based and healthier diet because most of the homes I visit do not. Most keep a very heavily meat-based diet, and eat highly processed foods. If I'm a guest in their homes, I eat what's in front of me if it's kosher, but I limit my intake. I definitely notice a difference in how I feel after consuming different foods, not the least of which is the frequency and intensity of acid-reflux (GERD), flatulence, bloatedness, repeating of foods, excretion, etc. My basic rule on consuming foods like the rest of my life is trying to be is "Less is More" -- the least processed, the least complicated. I agree with Dr. B. If you can't make it at home with normal store bought ingredients, then don't eat it.
P.S. On the "potato chip question," as Dr. B mentioned, fat, salt, and crunchiness. I admit that I will once in a blue moon buy some sort of potato chips or popcorn from the "healthy" aisle. But I don't do it regularly. If I had to make at home a choice, I'd make homemade "chips" of potatoes and sweet potatoes in the oven with baking and mostly garlic and smoked paprika. I nearly never cook with salt of any kind unless something is so incredibly flavorless without other herbs and spices and fruits and veggies. But yes, absolutely roasting or baking helps with the crispy crunchy nature. I don't own an air fryer, but I do own a plain toaster. I also have to mind the nuts too. I certainly enjoy my hummus with carrots and celery and apples.

You can't make a cracker with just flour and salt. You need some sort of binder.
I use apple sauce as binder or corn starch
2 spoons flaxseeds vs 1 spoon water, let sit for a bit and it's glue.
wheat-flour contains gluten, which IS a binder. The basic bread recipe is flour + water + yeast. But you could add flax, chia or psyllium husk.
Im brazilian and actually what happens is that this kind of foods are cheaper and easier to grab on the go than rice and beans(which os a staple here). So, its not about that brazil is getting more afluent but its a reflection of how the food industry works, the superprocessed are cheaper than fruits and vegetables. Super sad story: Quinoa is native to the highlands of Peru and it used to be a food that the indigenous people ate a lot of BUT it has become so popular around the world that the price has shot up so much that the locals cannot afford it and eat junk food instead.

The ingredients aren’t bad but the process of making them is what I’m not so sure of. For some reason I feel guilty for eating them so I’m thinking they must not be good for you!

I ate that junk from a very early age. It was always around. It puzzles me how ignorant our parents were in the 50’s and beyond. Just because this junk is manufactured, nobody holds a gun to your head to buy it or feed it to your kids.
Your resentment is understandable, but it doesn't take into account the effect of more widespread knowledge these days. In the past most people didn’t have access to the information, they relied totally on the professionals to let them know what to eat, and only a few of those knew the best health secrets. Manufacturers had full reign and nobody had the scientific studies yet to stand up to them. People in the 50s believed what they were told, they trusted the big guys because it looked like they had the answers to a better life. I think we are lucky now to have so much more information to go on and more accountability for what is made and what is advertised. I guess also we won't be blaming ourselves for what we don’t know yet. If we look back in 30 years time we'll probably raise our eyebrows at some of the things we do today. It's ok to learn new things.

Unfortunately the fermentation process doesn't remove any of the adverse health issues with milk. I make my own yoghurt now from oat or soy milk (no additives, the bacteria don't like those.., and i agree :)).
What about replacing with water kefir? You would need to order water kefir crystals. I also make l. reuteri yogurt with WestSoy soymilk.

I really didn't eat oil as a kid, but I tried doing whole food these days and I just can't get the nutrients I need and I fall ill. When I eat the plant-based junk foods like beyond meat, etc. I feel better. What am I doing wrong?
When you feel ill, do you feel bloated? If so, perhaps you don’t have the gut microbes needed to break down the fiber. You may try introducing the Whole Foods gradually.

I mean I do - we'd have to think about the microbes and how they interact with each other - as they're not going to be the same. A UTI infection is from e coli, while the microbiome would have staph aureus, but it can get a candida infection. So if you look up research studies about the competition and implantation of microbes battling each other for a spot in and on the body, then you'd know how they interact. The reason is sometimes if you get one infection, you don't get another - due to the one bumping out the other. I would say what's more important are the chemicals created - like butyrate - which decreases e coli levels. Staph and e coli seem to work together, being some of the most prevalent of infections, so they get impacted by similar treatments. See "Prevention of Staphylococcus aureus Infections by Glycoprotein Vaccines Synthesized in Escherichia coli".

I guess it depends on what you mean by bad food...most microbes eat some sort of a plant product (fiber, etc.).... What would be an example of bad food?
Yes they can. First. Bacteria dont eat food like we do, they absorb different nutrients through their cell walls with the help of enzymes and transsporter protein. In junk food and healthy food there are nutrients that feed both kind of bacteria. But healty food (rich in fiber, low in animal protein, fat and and refined foods, will benefit your gut microbiome by feeding the good bacteria more than the bad. So the ratio shifts towards an healthier, more divers microbiome. And vice versa.
Just give me the good old days when people ate real food and lived well into their 90s with good health - no diabetes, no heart attacks. Bacon and eggs for breakfast, potatoes fried in lard, homemade bread with plenty of real butter, homemade desserts with every meal, full fat ice cream, vegetables from the garden, and homegrown beef and chicken. The only thing I don’t remember my grandparents eating is lamb and cheese, but they may have and I just don’t remember. Sometimes I think the best thing to do is forget all of these extreme diets and just go back to the basics.
