      Your answer might be right, it may be just a marketing ploy. But I know from experience that food waste is a major hit to the bottom line in the restaurant business. By (under) projecting the usage for the day, they can minimize waste and increase their profits by running out. IF a restaurant can pull this off, it's just smart business. Regarding your (Jack's) particular complaint about the pulled pork, that item is not a mainstay of Texas BBQ like it is in the southeast. On a slow day they likely use a lot fewer pork shoulders than you encountered back east.

      every BBQ joint in TX has pulled pork. If the pork sells out in the first 46 people in under an hour, I think you should know your business. They went the rest of the day with NO pulled pork. They are grossly under projecting. Like 300%.

      @ Jack, I can't argue with anything you said. But several years ago Roy Blount wrote "Though I am proud to claim Texas associations, I am from the South. So when it comes to barbecue, my first thought is not of brisket but of pork." I'm from West Texas, which may be more beef-centric than the rest of the state, so please forgive me if I sounded too know-it-all in my previous comment.

      Cooking With Jack Show You know next to nothing about Texas BBQ. I lived in Austin and Lockhart for years. MOST Texas BBQ joints don't sell pulled pork. 😂

    While a great many are willing to wait hours to have their first Franklin's experience, I suspect a vast majority will never do it a second time.

    110-140 briskets per day every day, Pulled pork and chicken is a side dish.
    Franklin does brisket right but he’s not a buffet.

    Get your facts guy. They serve 110-125 briskets...per day. People don’t come for the pork, it’s about the brisket. If you don’t think the wait is worth it, go back to New Yawk, and leave our BBQ alone. Franklins is an institution. And they never have any problems servicing hundreds of people. Pfft.

    I beg to differ. When I went last month, the turkey was moist and about as good as anything I've tried. Brisket, pulled pork, and ribs were also incredible. Definitely worth the 3.5+ hour wait. And the drive from Los Angeles.

    I agree with you totally! I would not wait in that line for that bbq. I’ve had people get in that line to get it to go. And you’re right about the ribs being killer. I always get ribs over brisket. Good review Jack.

    I've lived here for ten years and I've never had Franklin's.....im not standing in line for BBQ when there are AMAZING places here. Should have gone to City Market in Luling or Lockhart....

    Since you guys are in Austin, are you planning to visit Lockheart and go to Black’s BBQ, or Smitty’s? They are much better than Franklin’s and there is no wait.

    Somehow, I just could not be bothered to wait in line for that long. We have a BBQ place here in Toronto that uses the same 'manufactured scarcity', and I refuse to go :)

      I do support places that make real, and quite excellent food. Probably more than most people do. The thing is, the local restaurant here is open something like 4 hours a day which is when they basically run out of food. Because of that, people who want some of it need to line up an hour before they open. That's fine for them. I refuse to do it, because there are other fine establishments here in the city that offer food that is just as good, but without the hassle.

    A review without sugarcoating is an honest one. But I take exception to a few statements you made 1) Running out of meats, unless you own or operator the same or similar business you can't promise everyone will get whats they came for...... 2) BBQ is a regional cuisine and you shouldn't expect to always find what your use too ordering so no MAC N CHEESE or CHICKEN shouldn't be a bad thing.

    Hey Jack, just to let you know that Arron Franklin has a "How To" BBQ Book on how he makes everything at Franklin's and where he get's his supplies, i bought it last year, along with He has a PBS Show on TH-cam and the full shows on Netflix re his cooking series on how he BBQ's at home and at his restaurant (easy to look up for both links) By the way, how was his BBQ Sauces?

    You should try the Salt Lick in Driftwood, TX. I was born and raised in Austin and would go to Echananded Rock then hop over to the Salt Lick after a good hike. They started in 1969 and its not to far away from Austin.

      goodfella21f if im honest I think Franklin is way over hyped. I even worked at a BBQ restraunt that was "best in central Texas" back in the 90's! That quote was from Jim Kelso, famous Texas reporter. We were smaller place but never had anyone wait more than 45 minutes. I say its over hyped because the food is just par and no food is worth more than an hour wait. PERIOD!

    You guys nailed it on your review. I had the exact same feelings on the food and service when I visited. I also agree that it was great to experience it once but I wouldn't spend hours in line to try it again.

    I dont agree with how upset you got. Franklin isnt making these people line up, i doubt he would even want that, the stress it puts on him has to be more than the enjoyment of having a line. Plus only so much cooking space, the only time i would agree is if he had room for more pork and just decided to not make it. I would be guessing he loads up all his smokers with mostly brisket leaving less room for all the other meats. Quality over quantity especially with room constraints. Last time i checked i dont think he promises anything to anyone depending on the day, if people line up and theres complications thats on everyone who came expecting to get what they want. also ive never been there but thats my take on it.

    I waited for a while and the guy in front of me was handed the dreaded ( out of meat ) sign
    Then I noticed a guy walking out a side door with food. I asked him . How did you get that? He said “phone order “
    Next time I go I’m calling it in 3 days in advance

      Central Texas doesn't eat pork barbecue. They eat brisket. Why should/would they make a lot of something that no one will order when that smoker space can be better used for more briskets?

    True Texas BBQ places will always be the small hole in the wall places. Nothing fancy, not famous, just real Texas BBQ where they take their time making it right. Franklin's might have started out like that, but once they turned famous, quality seemed to go down to accommodate the large outrageous crowds their trying to keep up with, and its never the same. Of course Texas is just too big to try all the real down home places. Stay away from the so called famous ones. You'll always be disappointed.

    I've always wanted to go to Franklin's just off of the reviews, but the horror stories I've heard about the lines and them running out of food has always stopped me from visiting Austin just for them a few other places. I think I'll just have to get really good at making homemade BBQ.
    Also I get why they don't want to smoke a bunch of meats. Franklins buys the best of the best meats so they want to they want to literally get every ounce of money out of the meat that they can get because they're prime cuts of brisket, ribs, pork, etc. It is a bit fucked when they know there's people waiting in lines around the corner and they smoke 3 pork butts. It's just not worth to me.

    You'll find brisket at every reputable BBQ establishment in Texas. Chicken is an afterthought, as is pulled pork. It's silly to give bonus points to anyone that had brisket lol
    Sorry but after ranking Franklin below a 90 I can no longer watch. That's insanity.

    Jack I understand your frustration but it's about quality NOT quantity. if you start to expand your business it's more you have to manage. With a small place like Franklin's it's easier to manage and control the food and keep the food as authentic as possible.

After being one of the most successful barbecue restaurants ever, awards, books, etc. they don’t know their business.     If you ever get to Pearland Tx try Killens bbq.....it's much the same there as far as the lines and the run out of bbq very fast. Not a huge fan of his bbq sauce but great bbq does not need it...also a tip for your cooking videos DON'T USE JARED GARLIC! that's sooo lame. FRESH...FRESH...FRESH

    You do realize that pulled pork is not a major part of Texas BBQ. Get over it you big crybaby. Most Texas BBQ joints don't even SELL pulled pork.

      Christian James my6 point is in reference to Jack's comments about every BBQ joint selling pulling pork. No, most BBQ joints in Texas do not.

    3 hours to eat and THEN you find out that what you want is not available?.... WHY do people return? No thank you, I don't care HOW good it is! I can make a killer pulled pork all by myself.

    The best Austin BBQ joint that blows Franklins out of the water is La Barbecue
