    Archie- hope you're still cooking!... followed your recipe for chicken quarters on a dual fuel masterbuilt my wife just gave me for a birthday gift. (I've had other smokers , some better, even built a couple for smoking fish). Long story short- after seasoning this smoker I followed your recipe for chicken quarters, I didn't use onions in the water, and only had a few ounces of pecan wood so I used some cherry. I was astounded at my luck,and , other than design differences and thermometers, was able to amaze even myself (?) Wish my mom and grandparents (from Oklahoma) were still around to partake . Thanks for an outstanding recipe.

    Archie -- Just showed my wife, and we're going to exactly follow your recipe today to see how it tastes. I have never smoked chicken, but I have smoked good ribs. So, I'll let you know if I have had a success today with this.

    Okay, update. Turned out SO INCREDIBLE. Very, very good chicken. It took longer to cook because I made a mistake and cooked it too low. You said smoke, so I cooked it at 185 F for smoking on mine. Yet, I rewatched and you were doing it at 275/300 for 4 hours. MIne was 185F for 3 hours, then I finished it up at 300F for 30 minutes or so. Very, very good. Very juicy and the marinade was out of this world. This was my first time ever to smoke chicken, so it was better than restaurants.
    Sorry -- but it's true. YOU DAMN SURE got a good recipe there, Archie !!! Thanks for sharing.

    Hey archi this looks good, awesome magnificent ... what temperature did you keep your smoker running? One other question .... I don’t have an offset smoker, I’ve got a bullet type of smoker (egg), will I get the same result?

    Good recipe, I'm gonna have to try it next time I smoked chicken, I use a char-broil electric smoker I had since 2013, last year it played out i needed a new heating element for it so I decided to use my char-boil grill to smoke some leg quarters til I got my new heating element, my char-boil grill has a offset smoker on it, I had that gill since 2009 or 2010, I tried smoking meat on it a few months after I got it didn't know how to use it so I gave up, then I decided to try to use it again last year til I got the part I needed to fix my smoker and I didn't want to wait till Tuesday til I got my part I needed so I could smoke some chicken, I went online to see how to use it, I did everything the video said, my leg quarters was on it smoking for bout 10 hrs and still had blood in it so I ended up finish cooking it in the oven, I never tried smoking on a grill again, I didn't know what I was doing, I'm use to using an electric smoker.

    Okay, they are cooking now (around 185 F and smoke is inundating them) and been cooking since 6:35 pm and it's 8:40pm now. Boy, they sure smell so good. Never squirted the Apple Juice like this before, but I'm doing it every 30-40 minutes. I can't wait. I'll let you know how they turn out. I am anxious & excited to see if the flavor is as good as you say.

    Always put the recipe in the Description where we can cut & paste it. It really helps because I have a cookbook that I move good recipes too, and I hate having to retype the whole thing -- when you've already done the work. Probably same with other people.

      yes bro it turned out great i didnt have the marinade you had but i had the pecan rasberry dressing . i followed your instructions though i put my onion and apples in a can and on the grill though. the wood of my choice was oak since its free and laying around. shit turned out good . locking them flavors in with that olive oil is a new one to me. much respect fam. i might send you some pictures of the leftovers

      Tommy Graddy I smoked it while I was smoking the leg quarters. In video/post production, we use a phrase “out of frame”. Which is a subject that’s in the vicinity but it’s not in the focal point of the lens because it’s not the star at the moment. Thanks for commenting Tommy!
