I'm not familiar with RTD simulators, but the reason the pots have little "detents" is they are wirewound pots and you are feeling the wipers pass over the wire. If you want good temperature independence you'd need a wirewound pot. I think @Ezzell_ is correct about the 4 posts coming out of the bottom (oh yeah, just saw what you mentioned. Perhaps they were added later for a specific purpose). Maybe do a reverse engineering video and draw out the schematic.
I would say the two knobs are the fine adjustments for the "zero"and "span" modes respectively. The coarse adjustments are the screws with the lock nuts.

      Thanks,
Ok, it could be the wiper I guess but man the feel so smooth I thought it may be a feature. I did think about drawing it out so I guess I will. I was just waiting to see if someone pointed me at a user manual or maybe had used one and could fill me in on it. Just one of those odd things I thought might be interesting take a look at for $5 😀

The four post is used to connect to a 4 wire kelvin micro-ohmeter....which is the most accurate way of measuring precise resistance

      Thanks,
That’s what I thought also in the beginning of the video. But if you look close in the video showing the inside bottom only two post are wired up to anything.
