  • Learn how to make an Iconic Beef Pelau (one pot rice dish with beef, rice, peas, carrots etc simmered in coconut milk) with simple step by step instructions from Chris De La Rosa of CaribbeanPot.com We've done the dry beef pelau so it's now time for team wet pelau to get their beef pelau game on.
    For this one pot rice dish you'll need...

    3 lbs stewing beef
    1 medium onion
    1 lemon (for washing the beef)
    1 med tomato
    1/4 teaspoon black pepper
    1 tablespoon salt
    1/4 teaspoon angostura bitters
    1 teaspoon Worcestershire
    1 tablespoon tomato ketchup
    teaspoon grated ginger
    2 tablespoon Caribbean Green seasoning
    1 tablespoon veg oil
    1 1/2 tablespoon golden brown sugar
    3-5 bird's eye pepper (bird pepper - or any spicy pepper you like)
    2 pimento peppers (optional)
    2 cups long grain brown parboiled rice
    1 can pigeon peas (about 1 1/4 cups)
    1 can coconut milk (about 1 1/4 cups)
    1 medium carrot (diced)
    6 oz spinach
    4 cups water (divided)

    Hey Chris! Happy Holidays! How would you rate this recipe on the "heat" scale, with 5 being too hot for most caucasians without health insurance; 4 being mouth numbing hot that will require Emergency Room attention; 3 being very hot (too hot for the spice naive among us who grimace when confronted with seeds from jalapeno peppers); 2 being enjoyably hot as long as copious quantities of cold beer are at the ready, or 1 being a hot that is hot enough to be enjoyed by everyone, regardless of ethnicity, and including children above the age of 10.     Nice recipe, Chris. However, you need to use a wooden or plastic spoon with that pot, to avoid scratching the surface and destroying it. Food looks delicious though!

      May I suggest using 'Chilean Sea Bass' it is pretty expensive but it's high fat content predisposes it for extended cooking without becoming too dry

      @@caribbeanpot one main procedure. Swizzle it while plenty liquid in the pot. So as to remove the bones. An old rum sucker one pot meal. Made while liming in the camp.
