  • Learn how to make #tasty Beef Pelau, a delightful one pot rice dish found in the Caribbean, in this episode of #TastyTuesdays with Chris De La Rosa of CaribbeanPot.com We'll first brown-stew the beef then add rice, peas, coconut milk and other flavor ingredients, before allowing it to simmer until everything is tender and all the liquid has been absorbed.
Important: If doing this dish gluten free please go through the entire list of ingredients to make sure they meet with your specific gluten free dietary needs. Especially the Worcestershire sauce and ketchup.
For this gluten free beef pelau dish you'll need...
    3 lbs beef
    2 scallions
    4 sprigs thyme
    1 tablespoon chopped parsley
    1 teaspoon grated ginger
    1 med onion
    1 large tomato
    3 cloves garlic
    1 tablespoon ketchup
    1 teaspoon Worcestershire sauce
    1/2 teaspoon black pepper
    1 tablespoon salt
3 cups long grain par-boil rice
1 can coconut milk (about 1.5 cups)
    2 cups water - adjust
    1 large carrot
    1 can pigeon peas
    3 small white habanero peppers

I followed your direction and my beef pelau was amazing. My mom is 87 and from Belmont; she loved it! She has dementia and it made me feel good to give her something that enabled her to remember home and family. Thank you Chris. 🤓❤
