One Pan Roast Chicken you can cook anywhere!

  • As much as I love a vacation, I always miss home-cooked meals. In this video I will show you how you can prepare an epic one-tray roast chicken for your family and friends with minimal ingredients or equipment.

    One tray roast chicken
    Ingredients
    - 1 whole chicken
    - 300g baby peppers
    - 1 bunch dutch carrots
    - 1kg baby potatoes
    - 2 tbsp olive oil
    - 1 bunch thyme
    - 1/4 bunch tarragon
    - 1/4 bunch chives
    - 2 tbsp flour
    - 500ml chicken stock
    - Salt to taste
    Method
    1. Turn your oven on to 180°c fan forced or 200°c with no fan
    2. Next, rub oil over the chicken and season with salt
    3. Place it in the centre of your tray. Cut the potatoes in half and place around the chicken with the carrots and peppers.
    4. Season the veg with salt and drizzle with oil
    5. Place into the oven and check every 15 minutes. Don’t be afraid to pull the veg out if it’s ready and then you can pop it back into the oven to heat it again if needed
    6. Once the chicken is cooked through (70°c internal temp), remove from the oven and set aside to rest
    7. While the chicken is resting, it’s time to make the gravy. Start by pouring all the fat and juices from the tray into a medium pot
    8. Then place the chicken roasting dish onto the heat and once it’s hot, pour over 200ml of the stock and use a spatula to remove all the bits from the bottom
    9. Add the flour to the pot and over medium heat, whisk this for 3-4 minutes
    10. Add the rest of the chicken stock to the pot and add the juices from the tray as well. Whisk well and cook for 6-7 minutes, stirring often
    11. Finish with the fresh tarragon and serve next to your roast chicken and veg

      Great cooking without dramatic , but I would put the veggies roasting after a certain amount of time ( let’s say half an hour ) adding them to the chicken roasting . It would have been easier .

    I have a compact kit I take when I expect to cook: two knives, cutting board, etc. A thermometer is easy to bring and a super idea.

      Absolutely agree with this. We normally stay in villas when we go on holidays, but no matter how good the villa is, kitchen is always poorly kitted out.

    This is how I grew up eating. Mom out a meal in the oven kept working. When it was ready the meat tested while the gravy was made then it's ready. Yum 😋

    Note to self get myself a pair of chef hands and fingers. They tell temp and can handle frying thingie out the oven or pans. Oh yes as well as bandages.

    I love this chef and I learn alot from him but salt and pepper is not enough Seasoning for me. Personally as a apprentice chef I like to season with more flavour, tonight I'm cooking two different roast chickens and I'm testing what I like best. For one I'm going to do a paprika/old bay Seasoning style and other a Herby chicken. I haven't started my apprenticeship yet but I've been cooking for 3 years and I'm 17 and know at least what I like for my family ❤

    Where is this oven that runs hot? I have met over 25 domestic ovens and they ALWAYS run cold. BY A LOT like 25 degrees. Thirty years. New ovens too. The only ovens I could over get too hot were solid fuel things in my Grandfather's house. I wish I still had that baby I can tell you.
