PlasmaBridge Challenge! I like the idea of building tributes to the developers' previous game inside their new one :)
1: Reenact your favourite Poly Bridge 2 levels. I'm thinking _1-10: First Jump,_ _3-06: Rock Skipping,_ or _3-15: Looper's Revenge_ would be fun if you can find/build suitable terrain.
2: Recreate your favourite PB2 mechanisms/linkages, e.g. _3-13: Diagonal Elevator_ or _4-15: Twist and Turns._

If you say this is the end of an era, a great sendoff would be doing this but in challenge mode and doing a select few levels with specific challenges for each level, there's no restrictions as to what worlds you can do, itd just be cool to watch a final sendoff rather than another challenge

How about beating Polybridge without using both hydraulics or split joints. Many levels will be a gimme, but there's a few that are going to be very difficult.
