I am a white woman in her 60's. I remember my grandfather teaching me to make homemade baked macaroni and cheese, probably in 1960s. There was such a ritual to preparing the cheese, cooking the noodles, and layering the pasta, cheese, milk, butter, all of it together. I imagine that he learned the recipe from a black housekeeper when he was young. Whenever I make macaroni and cheese from scratch, I always remember him. Now I will also remember the people of color who passed down the recipe.

It’s very popular in Barbados 🇧🇧🇧🇧 and the Caribbean. We call it macaroni pie.
I had read that the first Mac and Cheese was from Barbados and made it's way to the American south through Charleston, South Carolina Colonists from Barbados settling that area and bringing their slaves with them. It was popular in the colonists kitchens across the new world at the time.
Also the term pie is what was used by the British colonist in the 1700s. Moreover, I read that the original Macaroni "pie"s were made with the long tube pasta (which is still used throughout the Caribbean but not commonly found in the US where they use elbow macaroni).
That dish is popular in the Caribbean too. This is why everyone had at least one Pyrex dish.

In Barbados, my home country, we have a unique name for baked macaroni and cheese - we call it "macaroni pie." It holds a special place in our culinary traditions. When I was growing up, it was a cherished dish typically enjoyed during Sunday lunches and on special occasions like Christmas and New Year's Day.
That's not new; macaroni pie is not originated from Barbados. This is very common in south of the Caribbean. It is baked and not done as watery as the American version.

Awesome video man. My daughter is the macaroni and cheese maker. She learned it from her momma and she puts her foot in it. Always delicious. In every family there is one person is dedicated to making certain dishes for family meals. Anybody else ithat steps outside that boundary has to get tested to ensure they meet the standard. You just can’t bring whatever you want to the cookout.

This is one of my all time favorite foods. To learn the history behind it only makes me appreciate it that much more.
My grandmother from South Carolina taught my mom how to make baked Macaroni and cheese and she taught me. Very cool history we have, thank you!

There is so much to learn from different cultures and their history. Recipes like so much should be shared and enjoyed together with all people. Forget the box stuff; homemade Mac & Cheese is one dish that brings me home and my youth. We have much to learn from each other, regardless of color, religion, or political preference. Sharing love, like grandma's cooking, brings the human family together. Thank you for this history lesson.
I swear black people stay trying to pull in other races who didn't ask to be pulled in. Chinese, Italians, Indians, etc will never allow you or anyone else to claim their dishes. Other races gate keep their culture and it's why they get more respect than us. Everybody knows there's always going to be a black person giving other people permission to step on us. People acknowledge other races food as such, but nobody gives black americans credit for anything, so they don't have to pay us for anything. Whites call it southern comfort food, and make millions off of their cookbooks and tv shows showing how to cook collard greens, cabbage, etc. Knowing full well that it's our dishes, and now a white cook claims that she's adding dressing, their family recipe. Whites can eat what they want, but they are known for making stuffing not dressing, hence the stuffing in a box. We make dressing, and yet their cookbooks are flying off the shelves. Let's be honest, if we start calling it Black American food, they wouldn't want anything to do with it. If they claim sweet potato pie, I'm going to be pissed.

mac and cheese is a comfort food, a soul food, something thats very filling very simply prepared but gets alot of bang for the buck. And if done just right can seriously be viewed as an exotic cuisine. There is mac and cheese and then there is MAC AND CHEESE. and when you consider the components and the degree of goodness that can be derived in various ways long before you even get into possible adding anything additional, there is no wonder the dish is so coveted. Mac and Cheese with lobster or crab. insane!!!

My best friends momma was a chef who made some of the best soul food. If I stayed at their house overnight we always had some amazing food. She was my 2nd momma everybody thought it was awesome to see a little native girl come in with a black family to church on Sunday. Some of my best moments as a child. One weekend at their house and one weekend at mine . Coming in after school to both momma's having coffee if we got mad at each other. Or momma's were definitely special women who know how hard the world could be for both of us and always made sure we got through it all. Anyhow her baked Mac was the best and she loved teaching us to cook

Baked Mac and cheese is one of those dishes that was amazing to watch being prepared. And if you were lucky, you got to cut and eat a few but most importantly you learned. To this day, mines, don’t last. And I enjoy sitting at the table cutting blocks of cheese into little pieces to prepare it. It’s that season y’all. I’m so excited!!!!
The first thing my mother taught me to cook when I was a little girl was white sauce for mac 'n cheese casserole. She didn't like standing there over the stove stirring the sauce, so she assigned that job to me. This white sauce is so versatile, and when you add cheese, it's the perfect sauce for this dish. I had no idea about the history of it until now, so thank you very much for this video!

Sure! It's easy. Melt 2 tbsp butter over med/high heat. Add 2 tbsp flour. Mix well with a whisk. Cook for a minute or two. Gradually add 2 cups milk, stirring frequently. Keep stirring over med/high heat until it thickens. Add salt and pepper to taste. This sauce can be used for creamed vegetables. I sometimes add a tsp of French onion soup mix. For cheese sauce, add approx. 1 cup shredded cheddar (you can add more or less, according to taste); stir until it's all melted. You can mix and match your cheeses, if you like. Grated romano, swiss, etc., for example. Use this cheese sauce for mac n' cheese. Use additional shredded cheese in layers and on top of macaroni, for a baked mac n cheese casserole. Here in Puerto Rico we love eating a lot of the same food that black Americans eat! Especially mac and cheese, fried chicken and even potato salad.
I would have never thought they did Mac and Cheese in Puerto Rico! You learn something new everyday I'm West Indian and our English and French speaking islands make it. Of course we share frijoles con arrroz!

Too bad they didn’t invent any of it. They just took other cultures foods and appropriated them. All African American cultural inheritance came from Europeans or Native Peoples. Just because they put their own spin on it doesn’t make it a black cultural exclusion. And it’s also why the diabetes and the on going health crisis has affected black communities the most. This type of food is for poor ppl like eating the back fat of the hog. Soul food in general is problematic like most southern cooking styles.
Ancients greeks had black people in there culture as well
And that was rare. Y’all did not influence Greek food.

fact remains, that black african people were well involved in the mediteranean cultures of europe. the greeks and romans wrote extensively about black people. and both sides influenced each other. you find that greeks learned in egyptian temples and they heavily admired the nubians for their skills in many areas. they wrote many stories including them in them. like the story of troy. in that story it mentions memnon the ethiopian. ethiopian here meaning nubian. likewise the nubians wrote their language in the middle ages in the greek alphabet. the people of the past were not afflicted with the extreme racism and yt supremacy of our times.

Don't get it twisted just because European history has whitewashed the Western World with LIES that people like you believe. At every turn, European descendants will try to deny the contributions of Black people. Hell, the free labour of Black people made first world economic powers out of European countries. M&c is a popular dish in Trinidad and Tobago where it's called "macaroni pie". The simple versions are made of macaroni, cheese, butter, salt, black pepper...more elaborate versions include any combination of eggs, shredded or grated carrots, milk, pimento peppers, diced bell peppers, onion, corn kernels, parsley or other herbs, breadcrumbs, corned beef etc. It is usually baked into a more cohesive form than the American version though. It's usually part of a Sunday meal along with stewed meats and a taro leaves stew called callaloo.
It is now part of the national cuisine. 🇹🇹

I find the history of mac and cheese to be very interesting indeed, from all pasta being known as macaroni up to finding mac and cheese in carribean cuisine, fascinating! The spread of good food around the world is as wonderful as language or any other subject

I used to love my mom's mac and cheese. She didn't use bread crumbs or eggs, etc. Just mac & different types of cheeses. I always try to recreate something so simple but can't
2 eggs, whole milk, butter, and extra sharp cheddar. Use salt , pepper and onion powder to season macaroni.
None of that bread crumb or runny macaroni sacrilege!

Wow. I did not know about the long and complicated history of Mac and Cheese. I make it from scratch with usually a combination of 2 or 3 cheeses and add sautéed mushrooms. For me it is still comfort food but I now have a whole new respect for the dish. Very informative video.

It’s a staple Haitian dish. It’s called “macaroni gratiné” or “macaroni au gratin” in French or “makawoni au graten” in Creole.

I loved the history of this dish. I found it very informative. You have a great voice. Keep up the good work.
Another contributing factor was the federal subsidy of all dairy products. During the great depression, starvation was rampant in financially depressed areas of the country. Even today as prices go up, dairy is still affordable. I grew up in the 50"s and certainly remember having mac and cheese at least once a week. Regardless of color, our parents lived through the depression and those memories and recipes stayed with them. Next question is what about Kool-aid ? I too grew up with that.

What I appreciate the most is that everyone I know has their own method of making mac and cheese. I have a way of making mine. I have a combo of a good melting cheese, a good sharp cheese, and a good mild cheese. I like to sprinkle a little bit of Italian seasoning on top. Just a little bit.

The positives are it's tasty and can be inexpensive. One negative is many people with African heritage are lactose intolerant
Most adults are. Dairy is not for adults, it is breast milk. Which is baby food. It can be made vegan/plantbased
Oat milk or coconut milk is a great alternative!
All Cracker Barrel brand cheeses are lactose free.👍
And with all of these suggestions you can throw cheap out the window.

You telling how baked macaroni and cheese a.k.a macaroi pie was introduced to black communities in the United States. The dish is popular in other black communities /African diasporas in the Caribbean, England, Latin America, and many more. The Atlantic Slave Trade have trade slaves in many parts of the Americas so with the staple foods were similar such as the macaroni pie and fried chicken.
