I think it's wise to line the bottom of the steamer pot with something. a towel, or rack. they jostle a bit when steaming. SO YUMMY! thanks JOC.
used to work at an udon restaurant with chawanmushi made fresh as an appetizer. whenever we had leftover custard at the end of the shift, we would make a batch for the staff to enjoy. nice memories!

When I was in Japan I was served this dish at my boss's home, and it included a ginkgo nut at the bottom. Is that unusual?
