We call that sugar cure. Todd’s in Des Moines has a great seasoning for that. It can be bought in bulk.
So I brine up to a week. Then you can smoke it for a few hours or not. Great beer food.

I swear Texas cold colder than any other cold, I lived in Minnesota for 7 months and the negatives in Minnesota was more durable than 30 degrees in Texas
