Best Authentic Lebanese Tabbouleh (tabouleh, tabouli): My Mother's Recipe

  • Lebanese Tabbouleh (tabouli, tabouleh) is a lemony herb salad that you scoop up with lettuce leaves or a fork.
    You will need:
    - 2 bundles of parsley
    - 2 long stems of mint leaves
    - 4 tomatoes
    - 1 medium yellow onion
    - 1/2 tsp salt
    - 1/2 tsp cumin
    - 1/2 tsp seven spices
    - 1/2 tsp black pepper
    - 1 tbsp bulgur #1 (fine)
    - 1/2 cup fresh lemon juice
    - 1/4 cup pomegranate paste/Pomegranate Molasses (optional)
    - 3/4 cup olive oil
    Serving Size: 6 people

    This is absolutely divine. I just made it with a makeshift chicken shwarma and pita, and I honestly cannot believe that I made it.

    I just found your recipe today because i was searching for it due to eating at my first Lebanese restaurant here in the states. It's unusual to eat a salad without lettuce but your family's secret ingredients made it special.

    Many years ago, a friend of mine had a Lebanese wife. I was visiting and she asked if I ever had tabbouleh and I said no. She said you have to try it. I did and I couldn't stop eating it. It was so refreshing and delicious. She was so happy that I liked it and gave me the recipe. It is the same as yours minus the pom syrup. I will give that a try. Thanks.

    I usually leave the chopped tomatoes in a separate bowl with salt. This makes them release lots of water and I can drain them out before mixing them with the other ingredients! Amazing recipe btw

      That’s a great idea to reduce the water content (zoom) of the Tabouli and it would make the parsley leaves taste even more fresh :)

    I'm exploring Middle Eastern cuisine and I've stumbled upon this lovely video. Something I have noticed is that the Middle Eastern youtubers making tabbouleh make it mostly green, and the non-Middle Eastern youtubers make it mostly bulgur.

      Very accurate observation and very true!!!! In authentic tabouli, the bulgur is a very minor ingredient :)

    My family is from syria by the border of lebanon. We do it a bit different. We use scallions for the onions and only salt..oh and also cucumbers!

    I just had Tarna and Shawerma with Basmati rice, Tabbouleh, Mutabbal with pita... 1st time trying Tabbouleh and I really enjoyed the tangy flavor it gave when combing all the parts of the dish. I am going to try to make it because its sooo good😍

    My Palestinian mother-in-law taught me to make this, it's my favorite! They soak the bulgur first and the parsley is washed a dried completely before the salad is mixed. But I really like the way you have made it with the dry bulgur. I think the dry bulgur in your recipe would soak up the amazing flavors of the juices and oil. I can't wait to make it this way!       Its better to grow mint in a pot as it grows uncontrollably in the ground.

    My mother is Lebanese and I just made this and she went back for thirds!!! It was so delicious. She said when she was in Lebanon, her mother, (god rest her soul) would soak the burgul in lemon juice for more flavor. I did it your way though and it was absolutely amazing. I ordered the Lebanese style seven spice from Amazon as well as the pomegranate molasses because I didn’t want to take a trip to the Arab grocery store lol. Thank you so much!!! 🥰

      No, unfortunately I couldn't find pomegranate paste in any of the nearby shops, but I'll see if I can order some online for the next time :)

      25A0 :) the traditional recipe doesn’t contain Pomegranate Molasses, it is totally optional:) if available though, i totally recommend it, for it’s tangy and adds depth to the overall flavor :)

    Pomegranate paste aside (what a lovely addition), I have always soaked the bulgar and didn't know it should be added without first being covered with water. Also you use a very small amount, which surprised me. I am definitely recreating this for my lunch in the future, thank you.

    It looks lovely! In my family we dont use yellow onion but green onion instead and we skip the cumin and seven spices. Next time I'll try to add pomegranate paste, I usually only use it for la7meh b3ajine.

    Omg ❤️not good watching on an empty stomach first thing in the morning. 😋this is very appealing to the 👀. I’ve had many tabbouleh recipes but this one looks amazing the amount of mint is not overwhelming and the bulgur as well. 👏🏾 I’ve never seen pomegranate syrup added I will be looking for this today and making. Now if my mouth would just stop watering I can carry on with my day 🤣

      Yes, it should not be too much bulgur. and the bulgur should not be the dominant thing you see in the dish:)

    With all due respect to ur Mom's recipie
    I am A Lebanese was born there, we ate daily tabouley,
    And nothing to say about UR mother's recipie,
    But adding the Cumin to it and makes it look like an Egyptian tabouley.
    We use Cinnamon in it please try to exchange that ingredient and u will see the difference.
    The pomegranate was a nice touch,
    We use it but not to over whelm it.
    My village is called Al Qumatieh by
    SOUK AL GHARB, and CLOSE BY Alley
    We are right in the mountains above beirut.

      It has been over 45 yrs since we LEFT Our home land, Due to the war.
      I am an American Lebanese,
      Plz use a tiny small amount of the cinnamon,along with lemon juice for the Tabouley..
      Huge difference trust me.

    Thank you for a wonderful recipe. I love tabbouli salad, altho my local MiddleEastern Restaurant adds garlic so I think I’ll add some to this recipe too. I’ve never heard of pomegranate paste, but I drink a bit of Pom juice in my orange juice every day, so I think I’ll add a tablespoon of the juice and see how we like it 🙂 Looking forward to more of your recipes!

      Thank you for your kind comment☺️ the traditional Lebanese recipe doesn’t contain garlic, however, if you have tried it before and you liked it, i don’t see why not:) I added pomegranate molasses, it gives Tabbouleh a tangy sour taste. I love pom juice too, I drink it all the time too, I would advise you to skip it if it is sweet and contains sugar. Please let me know how you find this recipe after you try it:))

    I generally soak my bulgar in plain water and wait to get it dry for me to mix it with the vegetables.

      You can do that as well, that’s what the Turkish recipes do. We just used the fine bulgur as is and let the juices in the tabouli soften it.

    I can't wait to make this for myself and my son. I grew up eating tabouli, and I loved it but my father always said it was too time consuming, but this seems simple enough! I have pomegranate molasses (the Lebanese brand) قرطاس but you mentioned it was your mom's & aunt's recipe to add the pomegranate. Is your mom Persian?

    The Palestinians and Lebanese seemed to do similar dishes that have the same recipes and ingredients. Both cultures have transformed common comfort foods into gourmet experience that have surpassed everyone expectations in terms of taste, pleasure eating and healthy choices.The chef should have practiced better knife handling. But this is a good salad presentation that has great ingredients well done sister.

      It is my pleasure 😃 Tabbouleh is indeed very nutritious and refreshing at the same time! I know from my uncle, he, too, had to eat less meat, so make sure you include grains like lentils, chickpeas, and beans. Try to eat seafood twice a week for omega 3 and yes plenty of salads, you have Tabbouleh, Fatouch, spinach, kale and arugula salads! Besides food, definitely include exercising too! Good luck 😃

      When my Lebanese mother made her authentic version, she always softened the bulgar before adding it.

      Just after mixing (use bulgur #1) you can also soak it in fresh lemon juice in advance (1 lemon for a 1/4 cupof bulgur)

      Valerie Cahira :)) actually, thank you very much😊 And that is a great suggestion! I will be making a video about it soon then. Meanwhile, here’s a classical Lebanese recipe for it, it is actually a mix of 8 spices:
      - 1/2 cup ground black pepper
      - 1/2 cup ground cumin
      - 1/2 cup paprika
      - 1/4 cup ground coriander
      - 1/4 cup ground cloves
      - 4 tsp ground nutmeg
      - 4 tsp ground cinnamon
      - 2 tsp ground cardamom
      Mix all evenly and voilà! Also, I usually buy mine readily mixed from any Arabic or middle eastern grocery store!
      P.S It does differ from one country to another, there are so many modifications to this recipe, but this one is a Lebanese classic one.
