    As the “other” half of Simply Dunn Honey, I want to thank you Randy ( 628 Dirt Rooster) and Travis (Bee Wise LLC) for your impromptu assessment of our honey. We sent samples to Randy to get an honest evaluation of our creamed honey, not expecting an online evaluation. We appreciate any critic and recommendation they suggested. We are a very small company ( my wife and myself) an are evaluating ways to extend our customer base. We do hand stir and refrigerate our creamed honey to 57*F. We accept any suggestions on how to possibly improve our process. We are grateful for any beekeepers that sell their honey that are willing to share insights to what customers want. Thank you all once again.

      Actually, I use all of the flavors. The chocolate is great in my orange tea, and the cinnamon goes with all

      I made a batch of chocolate the other day. I used some Cacao nibs - a superfood- but the nibs like to settle on the top. It taste ok but not as good as I was hoping.

    I am not a beekeeper, but my little company sells a LOT of honey products made from honey from our local North Alabama beekeepers.
    I have found that creamed honey is best made from the darker honey types. They tend to be a stronger honey, which prevents the honey taste from disappearing in the presence of flavoring agents or pepper extract. With plain creamed honey, the darker, heavier honeys minimize that "marshmello" taste you get when making it from the lighter honeys.
    I also subject the honey to a vacuum degassing process after it is poured into the jars to remove the air from the honey just prior to capping the jar. This helps to avoid the "sugar crust" you see with a lot of creamed honey.

      Awesome comment! That is great information that I didn’t know. I’ve only made whipped honey once and it was by accident.
      I modified an ice cream maker to run overnight and dry down about a quart of really good honey that I wanted to keep from a cut out. It was too wet and I didn’t want to lose it to fermentation. In the morning when I checked it, it was all foamed up. It still tasted good but it was whipped which isn’t what I was shooting for.

    Cinnamon flavor is the only flavor I’ve made so far. It’s been very popular! I would love to try some lemon! That would go great in my hot spiced tea!

      Creamed honey in a sandwich with peanut butter and thin banana slices is absolutely amazing. I also agree with you guys....warm buttered toast liberally covered with creamed honey is a GREAT way to start the day.

    I never got into the flavored honeys myself. I always figured if it was any better than the natural stuff, I couldn't handle it anyway. But you two made it look so good I might have to give some of it a shot. Thanks for sharing your taste test. 👌

    I love trying different honeys from all over. So many different flavors occur naturally that I've never thought of trying honey with added flavors. Although my bees did make lollipop honey one time and that was pretty good.

      @@628DirtRooster I did a "swarm" removal from a dumpster, but it turned out to just be a bunch of bees on cases of outdated dumdum lollipops. To solve the problem, I ended up just taking all the cases home with the foragers inside. My bees cleaned the cases out only leaving the wrappers and sticks behind. I harvested one very colorful frame in spring for myself.

    Lemon Honey is real good mixed in with hot tea or to make a Hot Buttered Rum (A jigger of Rum, a tablespoon of so of Lemon Honey, a 3/8” slice of lemon that you have studded with 5 cloves, a pat or two of good quality butter (Irish Butter) and 6 ounces of hot water). A Hot Buttered Rum is great to drink when you have a sour throat or have been chilled. My rule of thumb is one delightful, two will cure what ill’s you, and three you don’t care what is illing you.

      Like Randy said people from the south might light stronger flavors more so maybe a stronger and a weaker version might be the way to go. I know I had a buddy from Louisiana that I thought must have burned out his taste buds or something, he heaviely flavored everything, especially with hot sauce!

    I didn’t notice how different plants and trees made the honey taste different till I started watching you Rooster. My dad inlaw got me hooked on sourwood honey. It’s all great don’t get me wrong but the sourwood to me gives the honey a not so sweet taste. I don’t care much about honey that’s so sweet it hurts my teeth now. To me sourwood is just right.

    Randy do you happen to know what is used to do the flavoring. This is a great video. I put my creamed in the fridge an yes it had a little harder crust on top . THANKS

      You can buy flavorings for creamed honey from Dadant and some other suppliers like that.

      We use organic powders for our Simply Dunn Honey, organic lemon juice powder is basically crystals, cocoa and the cinnamon is Ceylon. That type of cinnamon is recommended for diabetics.

      You only need one queen, and about a hundred workers. They will make their own drones when they want them.

    Have you heared of neonikotinoids? Jonathan Lundgren, etymologist? I would like someone who know more about this to tell me more, or if so, research about it. I think this might be important.

    Sue Bee used to bring their honey to my dads farm and they would give us spun honey when the picked the hives up in spring. Maybe he put some wax that makes it so thick. I do not like store bought honey. the Pasturizing ruins the real honey flavor. I just like the old fashioned honey in real butter.

    No no no you don’t waste great honey on flimsy piece of toast. You get your wife or whoever is there or yourself and make some cat head biscuits. Let them cool just enough to where you barely can pick them up and then you put butter and honey on them hot biscuits and let it all melt together

"wait a minute" scrolls. OOOOOOOOOOOh, these guys are just going to eat flavored honey in front of me and make me jealous for 24 minutes that's the process Oh. lol
