From the company's Operations Control Center (commonly known as the "OCC"), located at their Atlanta headquarters, there are up to 350 employees focused on endless monitors like a NASA mission control center.

Just about every airline uses custom software for that or if its not custom its a heavily modified version of something from a vendor usually connected to an alliance middleware platform to connect with partners.
