Glass Joe could definitely work as an echo fighter to little mac in smash bros. They are both practically the same height and weight canonically, and a good trade off would be to make glass joe weaker on the ground, but make his aerials better and a better recovery.
Glass Joe has gotta be my favorite punch out opponent, all heart, no skill, but yet he still fights. (He also apparently got that one win from KOing Nick Bruiser)

As much as I like these videos, they always use a speed running strategy and skip most of their patterns. So you can’t really see much of what they do in each game. Especially, in the glass joe nes fight.
Imagine in a Punch Out!! game he trained hard, and then finally became the world champion and renames himself to "Tempered Glass Joe" (FYI, tempered glass is 4x stronger than regular glass)
This might sound weird, but you're fighting these characters a bit too well to be recorded in an "evolution" format. You're not giving the characters room to breathe and show who they are and what they do. It's an excellent show of skill and knowledge, no questions asked, but players not in the loop might find this video less helpful.
Or it could be Little Mac with different colors for the corresponding boxer, and maybe have a 3rd alt costume for the Glass Joe one where he wears the headgear
