Loved the zucchini salad, yum! Salty, lemony, and looks so fresh! 23:50- This salted, preserved butter is a type of fermented butter called Smen, with a cheesy ghee taste. I had never heard of this till now. Listing the name here for others. The tagines are all fantastic. Love the spice base and the authentic tagine vessels in which they are made. Each tagine is as individual as the woman who made it. This was so much fun to watch. These ladies are lovely, and so talented. I enjoyed this very much, and learned a lot from my Moroccan sisters. Any fish will do actually. They only chose deboned white fish because they know westerners don't like their fish to .... you know... look like fish. For the best flavor, put in a whole fish, head, bones, and fins in, just ask your fish monger to gut and scale it, then score the surface, and marinate it proceeding the way the Dada showed.

Not really, it's a thing on it's own. Phyllo dough is too brittle. But you can use egg roll wrappers to serve the same purpose, choose the thinnest ones out there, Moroccan warqa is incredibly thin and malleable

Is warka like phyllo dough? I know warka has the meaning of paper and phyllo dough is like paper. I love Moroccan cuisine!
