Since finding your channel I'm addicted. I love chicken recipes as it is still affordable in Australia 🇦🇺 I hesitate to try bread etc as at 71 the only bread I've ever cooked is Damper, but I use to always have suet dumplings in my beef stew (back in the day when beef was affordable 😂) . It is Autumn here and I love comfort food in the colder weather. 👍🇦🇺
As a Yank I can say I am an expert on this dish. The ingredients vary a little but the technique is as you say "spot on" :) I am also from the north and can say that fluffy style dumplings in whatever incarnation, are the way. Those flat chewy noodle type dumplings are an abomination, and should have gone the way of the mammoth :) Thanks for the vid Rik.

I love this channel for reminders about old fashioned favourites, but mostly I appreciate what a fantastic resource it is to teach new cooks that they can make good and interesting food without stress, drama or exotic ingredients. Really good guidance on basic techniques and wholesome instruction on how to adapt and pull a dish together. Brilliant generous sharing of knowledge and experience. As an aside re suet. When I was a girl many years ago I used to go to the butchers and buy suet straight off the beef carcass. Buy it by the lb. Take it home and my Mother would take the dry skin off it and we would grate it up finely for dumplings. To buy it in a packet is a joy and so easy nowadays.

I love the big, doughy dumplings. In the Southeast US where I currently reside, the preference seems to be for flat, rolled dumplings that resemble pasta. I grew up in Texas and we always had the big, fluffy ones. Your version looks mouthwatering.

My dad was a good old Aussie country boy and loved them! But for me I think the fact they were "white" was part of the problem. I think you're correct in saying it's in the handling.. This was a big hit and everyone loved the dumplings. I lot of folks around where I live do thick, sliced pie crust type dumplings and they help to stretch the food but these dumplings were a treat.
Atora! Atora! Atora! - parsnip sweetens the stew up for me but you can't beat this easy one pot recipe. Just needs a couple of crusty bread rolls for dipping! Nice with beef in the slow cooker as an alternative method. good stodge that chef ;)

My usual chicken and dumplings is 3 cans of Campbell's chicken noodle soup and Bisquick dumplings! (sorry!) But after watching this I'm going to have change my ways! 😅
You did do a good job, however I believe strongly in cooking a whole chicken in a pot with boiling water and shredding the meat before adding the veggies, the slurry, and then the gravy (I am from FL and have a chicken and dumplings recipe from my aunt who lived in GA for many years I have tweaked.). The whole chicken method adds so much flavor and I know it takes a long time, but you get such a great flavor from boiling the chicken for two hours and then shredding the meat to add in with the veg. I make a roux with flour, butter, some stock and milk and add that with my stock towards the end before I put my dumplings on. I make my dumplings herby but I love to add corn meal in mine, some melted butter and fried chicken skin. However, even in the US and in the American South everyone makes this dish differently. There is no right or wrong way to make it and your way is not wrong. But I gotta say, boiling that whole chicken to start and shredding it adds so.much.flavor! It really makes the dish and there are others in the American South who agree with me that is the way to go but not all I will admit it.
Yes, fresh stock is the way to go, if possible. Crispy chicken skin would be nice in the dumplings. I used to include all kinds of things when I baked bread. Jelly snakes and chocolate frogs in sweet bread, olives, onions and cheese in savoury.
