    From the town I am from in Mexico, they used to make their own vinegar. My grandmother used to make it from pineapple peals. Our neighbors use to go to buy vinegar from her. Good memories from Mexico. Here in the USA my grandmother still makes her own vinegar and it's delicious.

    This. Looks. Amazing. In the dead of winter, nothing looks better than a plate of fresh produce in the tropics. I thought regular bibimbap was amazing, but this totally just blew my mind.

    here in the Philippines we call those small limes 'kalamasi'. they are so small but they give out this very sour yet a little bit sweet juice. we slice about 3 pieces of them and mix it with fish sauce or soy sauce and its our dipping sauce for fried fish and meat. :)

    I'm not sure if you could find the vinegar in the supermarket while you were on the beach, but in Mexico City you could have go to the Korean Town that is nearby Insurgentes subway there are korean stores and restaurants :)

    Hey Maangchi, a good tip when cutting raw fish to not tear the edges is to 'draw' the blade, like slice through it in smoothe long strokes, instead of sawing it.
    PS, even though I don't eat meat I watch all of your videos!

    Wow!! You really know how to vacation! That dish looks amazing! I like how you are always so creative in resolving ingredient issues while traveling. You should do a bunch of cooking programs showing how to cook great Korean food anywhere in the world. :)

    Nice recepie. I like that you are in Mexico the fish is really good here, I live in Manzanillo another coastal city and I work with many Koreans so I often go spearfishing and we have big Sashimi parties.There is nothing beter tan fresh raw fish. I`ll have to try this recepie.

    In Malaysia that small lime called kasturi lime.. because of it fragrant smell.. kasturi is the material got from deer (musk) for used in perfume production..

    I like how you show cooking as a process. Like when the sauce didn't have enough sugar and you added more without editing it out :) That food looks amazing!! Did the fish taste similar to salmon?

    this is a kings feast compared to my version 😅 i just use viniger pepper paste and sesame seed oil to mix the rice, fish, and vegetables. (and i only use raw cucumbers, lettuce, and sweet onions.) Thanks for the video ill be changing my way of eating 회덮밥 very soon ^^

    That mexican lime is more likely "calamansi" in the philippines. Just like a small version of green lemon juice.

    Honestly, the whole unmonitored fish thing is probably better in Mexico than many other places. Also, the quality of the fish has more to do with the quality of the water they swim in and the food they've been eating.

    Wow, i never thought about it before but yeah...you dont really see vinegar used much in mexican cooking. I guess it would be more difficult to find down there.
