    Some of these are very interesting but the whole ice cream frosting... Nah. Seems like a recipe for soggy cupcakes. You should try the deep fried ice cream again but mix a beaten egg into your cereal to create more of a batter type consistency, should help with the frying process.

    • @jennreitzel
      @jennreitzel 4 ปีที่แล้ว +61

      Totes. I've made it before alternating between rolling in egg and then rolling in crushed oreo. And then freezing and rolling it in egg and oreo a second time. The thicker you make that crust, the better.

    • @MoonlighPurrfection
      @MoonlighPurrfection 4 ปีที่แล้ว +18

      That's what I was thinking too. I've seen restaurants serve cereal crusted (usually just corn flakes or something similar) fried ice cream before, so it is possible. It is just getting the correct technique. When it comes to the ice cream rolls, its a mixture of technique and the proper tools/substitute tools.

    From my experience, for the fried ice cream to work, you need to dip it in the cereal mix and also in some eggs, as you would do with anything that's fried - for it to stick together. Maybe even 2 coats 🍧🙌

    • @broadwayssm
      @broadwayssm 3 ปีที่แล้ว +5

      I came here to suggest the same thing, first coat the way they did it, freeze, then egg wash, then second coat and freeze again. The more frozen it is the better it’ll fry. They also needed more oil. It hit the bottom of the pan which didn’t help.

    Just covering ice-cream with a cereal crumb (which is basically what you did) doesn't work with fried ice cream since it doesn't actually insulate the ice cream from the heat.
    You need to cover it with a batter or panne it

    • @3kylajsmith
      @3kylajsmith 4 ปีที่แล้ว +4

      I've made fried ice-cream before and all I did was roll the ice cream with crushed cornflakes and cinnamon and then fried it for a few seconds and it worked just fine. The icecream didn't melt at all. Although i did pack the cereal onto the ice-cream ball 😋 unlike Rachel who just kind of lightly rolled them. for the fried ice cream: I would recommend doing the same kind of set up that you did with the cereal but instead of putting it in the oil like that, I think you should cover it in a type of batter people use for deep fried Oreos. Once the ice cream is covered in batter, put it back in the freezer for a few minutes to keep it cool, then quickly put it in the oil. You'll still have the cereal on the inside with the crunchy deep fried batter barrier protecting the ice cream. I had it at a restaurant a couple times before and it's usually covered in some kind of batter.

    Those types of sprinkles (nonpareils) bleed the color because it’s not sealed with anything, it’s just food coloring dried on it. The ones that would work at the ‘jimmies’ those little stick like sprinkles, they don’t melt like that.
    Also turn the kool aid one into a milk shake? Or try the no machine ice cream recipe instead

    Keeping your scoop in warm water between scoopings will make smoother ball shapes and prevent the ice cream from sticking to the scoop. Chefs use the same hack for knives used to cut desserts. An easy way to prevent crystallization (icyness), add some agar agar (or another gum)to your base ( it may require heating and cooling to fully dissolve). That will prevent crystallization and requires a lot less work than constantly stirring.

    One ice cream hack I like is being able to have soft serve at home (because sometimes I’m lazy and don’t wanna go out, plus I have more flavor,options than vanilla, and also- I can’t afford a million dollar soft serve machine). Just.. essentially do the ice cream piping bag thing. Bigger opening to squeeze it out of, and into a cup or bowl.

    To make fried ice cream you need to coat the ice cream with a mixture of egg and milk before coating with bread crumbs then freeze 4 hours then repeat the same process so the ice cream will not melt out in hot oil not put it back in the freezer overnight then its ready to fry
    Remember fry in really hot oil so you will brown the bread crumbs fast without melting the ice cream

    For the fried ice cream, try a bonding agent for the cereal before you fry it. Mix the crushed cereal with a little melted butter before you roll it in the ice cream so it's more like a dough and won't come apart in the oil! :)

    My favorite dessert at El Chico's Restaurant was their fried ice cream. It was a much larger ball and the coating was thicker on it. Plus, when they fried it they put it into a fryer so that it was submerged. With the thicker coating it was able to fry quickly while the inside stayed frozen. I love these videos that you do where you test out different hacks - and call Chris in when things don't go as planned. 😂

    My father used to make fried ice cream a lot when I was younger, based off of the Chichi's desert. The only thing he ever fried though was the tortilla shell. He just rolled the ice cream part in some crushed cornflakes. The warm part came from the tortilla shells and either honey or hot fudge that was drizzled over the top. It was really yummy.

    There are 2 things that help with the consistency of the ice cream: ice cream stabilizer and emulsifier

    A note for deep fried ice cream: try coating with the crushed cereal, freeze for 1 hour, then coat with an egg wash (melted ice cream works too) and then with a final coat of the crushed cereal. Freeze for 2 hours then deep fry. It only needs to fry for 1 minute or less
    I used to make this a lot in the restaurants I've worked in for large crowds! Hope this helps anyone wanting deep fried ice cream! 💕🍦
