Egg Plant or Garden eggs stew iscone of Ghanaian's common sauces which pairs really well with boiled plaintain or yam, Gari, Banku etc. Pleasure give this recipe a go and I bet you will love it.
Ingredients 👇
Egg plant
Sunflower oil ( substitute with oil of preference)
*Tinned Anchovy fillets (salted) and equivalent to salted fish
Hebanero pepper
*Sliced onions
*Tinned chopped tomatoes
*Geisha
*Sardine
Shrimp powder
Salt to taste
Spices - Dried oregano
Dried chives
vegetable seasoning (You can use any spice of preference)
Plaintain

I will Dearest Dorcas. I Scoop the excess oil most of the time for other stew recipients because of the infusement but I missed the part I scooped the oil off in this video, i realised during the editing that my camera didn't capture it.
