It's better than the recorded version, the original is so melodically and harmonically boring! The song builds so much tension it needs to come to a release and this solo does that. It's technically and musically superior. Melodies are more tasteful and it's actually played professionally.
It is not about respect to be honest. It is just that they could not make it any better so they just stuck with it as it is. When you do covers of other people's work, it is perfectly fine to modify and add your ideas and soul but only if this will make it better than the original otherwise it will only show that you are dumb. Robin Fincks solo is great but Slash here schooled him on every possible level and I doubt Robin Fincks could ever come up with a better Sweet Child of Mine solo so the only option he got was to respect it. Also keep in mind this is a live performance so prolonged solos are acceptable.

He's not a robot. Lots of players (the creative ones) change solos night to night. Slash, Clapton, Page, Gilmour, Blackmore, Gers, Sykes, Yngwie, the list goes on.
Slash rarely plays solo's note for not unless it's promotion - I wouldn't want to play the same solo night in night out. Improvisation keeps it interesting for the audience but most importantly for the musician. Don't whine.
