      Happy Easter to you as well. The pinwheels, (broccoli and pepp), along with an 8 count of the bruschetta, ready to go, from our local pizzeria, is something I miss about LI.. An after work staple for this or that. Same goes for the Greek place. I miss those days. Simpler times. 🐰👍🌻

      I suspect it's because he's been getting some really good food and his palate has adapted so he's become more discerning. At the same time he gives thought and reason to what it is that effects his ranking. In this case, the pepperoni.

    Also, I appreciate that James is giving tough reviews - I know you'd probably love every recipe to get a 9 or 10 from him, but I think he's really trying to compare these to what a 10/10 dish would be and it's an honest thoughtful review - it doesn't speak bad to the recipe or dish at all from my perspective, and I recognize that there are a ton of dishes that I love to make and eat that I would never call a true 10/10 - I hear a James "7" and I think that's probably pretty tasty, is it going to blow my mind, nah, but I'd definitely enjoy eating it!

    I’ve been watching some of your older videos. It’s impressive how much you’ve improved your camera technique. In earlier videos it’s very noticeable when you switch between the main and the closeup cameras. You changed your focus and obviously held the food toward the closeup camera and it could be jarring. That’s even after you stopped ducking down to get in the screen. Now it’s smooth and natural seeming. Your recipes and narration have always been great. Now the camera work matches that top notch delivery. Thanks.

      Thank you! It took a long time for me to get here with editing. I'm still not great, but at least I know what to look for if I ever hire it out. The editor should be better than me at a bare minimum lol.

      @@SipandFeast I think if you can manage to create some good thumbnails, then you could bump up the quality by a good margin. Something that is recognizable and signals to your subscribers your new video. I can only speak for myself, but I didnt really see this video for 2 days since it didnt catch my attention when I went through my feed (though I have been more busy than usual)

    This channel is amazing, these are good recipes with tasty and fun ingredients. During the lockdown I decided to take on cooking every Friday through Monday, to learn and give my wife a break after 18yrs of me traveling overseas for work often and not being home. Also wanted to do something rewarding with my time home.
    Nothing feels better than to spend time making a meal in the kitchen that my girls and wife really enjoy. Thank you sir, you have made me a hero to my kids who look forward to weekend dinners. You have made a difference in our family, thank you!! My Dad status is now hero level with my girls! Thank you,

    I love Mutti tomato products. If you can find them they have canned cherry tomatoes. I use them in a tomato soup I make. I always horde them when I find them at the store.

    I've been using Mutti tomatoes for years now. They're the best. Also like the Rosso brand. Both are more expensive but worth it.

      Lol thanks. I always keep going. Basically I create live videos that are edited down, instead of scripted videos which are more common with the larger cooking channels on TH-cam. If I was a good writer I would probably script them.

      My wife picked up the same tomatoes. I look forward to using them. I've been loving the current crop of Cento San Marzano. Tomatoes are like wine. There are some labels you can always count on, but certain years they really shine.

    This looks great! Gotta try it or some version of it. BTW - Thanks for suggesting using crushed tomatoes (with a little salt) for pizza sauce in a previous video. I did it with a little tomato paste added and the family gave it a thumbs up. 👍

    Ok, I have to make these. But I wanted to share my favorite sauce. I got this from Sam the cooking guy's channel. It is sun dried tomatoes (he uses paste) and bloody Mary mix in the blender. I absolutely love the flavor of sun dried tomatoes in everything, and this sauce is just amazing. Maybe not traditional Italian though.

    Nice recipe! In addition to sprinkling it on, I also like to dunk the bottoms into some pecorino or parmesan before placing them down. Also, it does work very nicely with puff pastry, too. Though they tend to lose their shape a bit if you overdo it with the filling. Even though I don't like pesto by itself very much, I often use it as a spread and have the tomato sauce just for dipping. :-)

    Nice to know that I'm not the only one that uses a brush to "paint on" pizza sauce. I've been doing that for years. It wouldn't be efficient in a restaurant environment, but it works well at home for those that don't ladle on sauce very often.

    I like that James doesn't rate Dad's food---he rates Jim, the chef's food---and rates it according to his preferences and taste. He's not overtly flattering just because this is Dad, nor is he hyper critical for the same reason. Good food critic for such a young man!

    They look amazing but it might be better with Prosciutto and maybe some finely chopped olives but the cheese was an awesome boost to the presentation for sure gonna have to use it some day

    Oil does matter - don’t use the EVO to cook if you can avoid it. Regular OO has a higher smoke point and is far less expensive.

    going to try this with my daughter. she loves "pizza" and thats some kind of nice adjustment.
    i use Mutti Pelati and i think the difference to San Marzano are so little that its not worth the cost. for SM i pay 2,80€ and for Pelati 1,30€ (400ml )

    I love your recipe. Planning on making it this coming friday as a puzza friday movie night.
    Also, i think its great how you encourage your son to be part of the videos. And especially, so cool that he is open to critically discussing your work. As a dad that can be hard but.... as a son it is so important to feel comfortable to be yourself even when its different to dad. Especially when its in contrast to dad.
    Keep opening up the stage for him. It says volumes about you.
