    I've tried all minced lamb available in uk supermarkets, Lidl's minced lamb is the best for donner meat(donner meat is all lamb,adding beef it it is just kebab meat). If you want an easier recipe just use minced lamb,donner seasoning and potato starch(instant mash) mix by hand all ingredients until all the air is gone from the meat,you will notice this as the mince will go from red to brown,the colour of donner meat! squeeze through fingers for approx 20 mins, occasionally add water to your hands. Cook in tin foil as you did but when ready take off tin foil and cook for 10 mins more.
    For an easy chilli sauce add 1 part ketchup to 3 parts water, 1/4 tsp mint sauce and a pinch of chilli powder, mix together.

      Thanks for the comment, much appreciated. This is a Turkish recipe where any meat can be used including chicken (Polat, one of the largest producers of Doner Kebab meat in the World add all three meats to their Doner Kebabs). Doner Kebab comes from the Turkish - Doner Kebap which literally means - Rotating Roast. I do prefer all Lamb but it can get quite expensive.

    Watched the video and was impressed. So I ordered a packet of DA MALAT Doner Kebab Seasoning. Excellent result. Better than takeaway Doner, without the fat. Highly recommended. After cutting the meat, I browned it under the grill.

      Might I suggest blasting the outside of the "roll" with a flame-burner for a few seconds? Would likely dry out quickly if grilled for too long.

      Just uploaded a recipe for traditional fish and chips. I've disclosed my secret batter recipe for the very first time so you'll have to give it a go. I use the same technique for making crumpets (I'll do a video on how to make those as well) :-)

    Yey at last the answer to my problem! Thanks for the video - I've been trying homemade healthy doner meat for a short while, tastes amazing but have been struggling with the texture. I actually fridge it afterwards then carve it the next day cold to make the thin slices which works well as the fat solidifies a bit. But looks like making it almost a paste with a food processor seems to be the key! Mine have been coming out a bit dry too, which I guess the bread helps to absorb and retain the moisture and the foil Xmas cracker (I have been using a bread tin but ends up swimming in lost juice. My secret ingredient btw is Italian herbs. I make a massive batch and freeze it after slicing - a minute covered in the microwave when you want it, and it comes out steaming hot and moist like they pull it from the bain marie at the takeaways. Instant kebab on demand + healthy :)

      It's incredibly easy to make Chicken Shish style marinades. I used to LOVE Chicken Kebabs but now can't stand how bland they taste compared to what I produce in my own kitchen. :)

    I bought this and it arrived yesterday. I made it exactly as the video says. WOW! It is very much like the takeaway version. The only thing I found was that the meat needs seasoning with salt. Other than that it's brilliant we all loved it. I didn't have an electric knife so used a steak knife and it cut it well. Would definitely recommend it. I had to cook mine for about an hour slightly longer. I used a meat probe and after 50 mins it wasn't cooked in the middle so I just added more time. Every oven is different so I'd advise also using a meat probe.

      Great feedback, really appreciate it. Part of the plan with DA MALAT is to cut down on cheap, heavy ingredients like salt that are killing our generation. Profit is king with the multi national food producers. Having said that, some people prefer a more seasoned taste and that's fine. You can always add but you can't take it away.

      Cooking time with meat all depends on the size and weight. If you have more meat to cook, then it will take longer :)

      Have a look at the homemade Naan bread video on our channel. Make them in advance then warm through when needed. Topped with salad and strips of doner meat, nothing better (apart from topped with Tandoori Chicken of course).

    YUMMMYYYY. This is something between a döner and a köfte but surely it has to be so delicious! You also can differentiate the taste of the meat sauce with onion juice, garlic, milk, thyme to marinate the meat. And the best marinate time is 1 day. But if you are in a hurry , half an hour will be enough. Ellerine sağlık chef! Bon appetit

    Hi, I made this up yesterday as I'm on a keto diet. I must say congratulations....It smells EXACTLY like doner kebab meat and tastes very good too. Probably because I'm used to eating shop bought doner, I think I'd add salt to the recipe. I know I will for me next time - and there will be a next time!

    Super easy to make and it’s as tasty as it looks. Fresh and without all that salt and fat but just as tasty it has to be a winner. Cooked mine as the video but had a shallow frying pan on hand to brown each side before serving. This spice mix would work well in a Kofte with finely grated red pepper, onion and parsley. Top work on your spice blends👏🏻👏🏻

    Nice video. It's a lot of fun trying to recreate restaurant food. Making this today. I will be adding another step - let the meat cool after cooking so it holds onto moisture, then slice, then grill to get crispy edges and serve.

      put a tin of chopped tomatoes,3 or 4 green chillies,a tennis ball sized onion and a tablespoon of ketchup in a blender,makes a delightful kebab shop style chilli sauce :)

    Brilliant idea, i like mine chargrilled, so im now thinking of following your process through and adding an extra pan fry and refry for every new layer of shavings, so every shave is like the first

    My husband is from Wolverhampton and I am American. We moved to the states a number of years ago and one of the things he misses most is kebabs. I’m so happy to have come across this video and plan on making him Doner kebabs for our upcoming anniversary. Thanks for making this vid. One question though is what spices are in that spice mix? I will have to create that spice mix from scratch as I can’t seem to find that brand in my local grocery.

      Thanks for the comment Cary, much appreciated. DA MALAT sell to the USA through their website. If you want to make a spice mix from scratch, search for Gyros seasoning recipes. There are a couple of OK ones out there. DA MALAT has spent a long time perfecting their spice blend recipe so wouldn't publish it for obvious reasons.

    Very good video, I'm in Adelaide and it's very hard to find a proper Doner kebab here. Plenty of lamb giros but just not the same. Love my doner kebabs.

    Pull the blade out of the processor when processed to speed things up. Also char the surface of the kebab meat each time you slice portions to enhance flavour.

    What does it contain and can I not mix it myself?

      There are a couple of good doner kebab recipes on the net. Ours is a commercial blend made by ourselves onsite, is of Turkish origin and we wouldn't disclose the recipe for obvious reasons. Also search for Gyros meat recipes as the spice blend is very similar.
