I'm sure someone has already mentioned this, but the dough will be harder or softer partially because of the weather. It's very normal, so just don't add all the water immediately. Then, add water in small amounts until the dough is the correct softness. It will also soften slightly as it rests and the flour hydrates. I'm saving that curry fish recipe, as it looks delicious. The pizza buns also look really tasty!

Here’s advice to make dough✨
Squishing it using fingers can cause it to become lumpy!
Instead, throw the dough on the surface and, make sure it’s on the centre of the dough, push the dough away! The long dough gets folded back, then push again! Don’t forget to rotate the dough so it gets kneaded in all directions!
It’s going to fall apart in the beginning but keep pushing and it becomes a really smooth and shiny dough!
If you replace the milk and water with a medium beer the crust gets a great chew.
When imamu-san posts on Fridays my weekends are suddenly 10x better (exaggeration but yes)

I feel like i have to mention, the safer/easier way to cut round vegetables such as potatoes/lotus root is cut a thin layer on one side so its more stable to cut the rest. Love this video so i am re-watching it for ideas!

Dough gets tough when it’s been over kneeded! It means the glutens been overworked but honestly those pizza buns looked so yummy anyway! Definitely gonna have to try that recipe
