    Well I tweaked the recipe a little. What I did, was get rid of the bread and herbs. Discarded the lemon and substitute it with milk. Then eggs I substituted with a spoon. I got rid of the avocado and added a little bit of lucky charms with the milk and put it into a bowl. When you mix those up you come out with something really creative. Cereal. Because I had none of the stuff to actually make this recipe and was really hungry.

    I have an amazing recipe for poached eggs. where I work is famous for them. we take our olive bread (just Italian like bread with a bunch of black olives baked in) & on top of the bread, put a mixture of artichoke & lemon juice spread on the bread (just mix artichoke & lemon juice in food processor). on top of that put arugula greens, then on top of that the poached egg. its absolutely amazing.

    I just made this right now and it turned out really really good! The way to do the poached eggs were amazingly easy and effective. I believe you should be careful with the amount of lemon you put in the mash, you don't want it to overpower the taste. Thanks a lot for this recipe!

    I had an avocado toast in Bali where they topped it with toasted capers and goat cheese. It was so divine I went back to the restaurant TWICE during my 2-night stay!

      Bankers Hill restaurant at San Diego airport also had a similar avocado toast with capers and goat cheese! OMG, I haven’t tried any other avocado toast that gooood! Best ever! 😋

    This is my fave breakfast every weekend, I usually just add salt and pepper with the mashed Avocado, even nicer using Smoked Paprika and even a few thin slivers of cheese sometimes. It has replaced Bacon on a Saturday morning, cant give it better praise than that!

    I made this last night and I'm having it again for breakfast this morning. IT WAS GREAT!!! I replaced the poached egg with a lightly fried egg white and added a little cheese. It was so simple and very good!!! Thanks for sharing!!

    Here's another spin on a poached egg and works especially well on a not-so-fresh egg. Add about a tablespoon of distilled vinegar to a couple quarts of boiling water. To that add about 1/2 tsp of salt. Reduce your heat to a simmer. I actually crack the egg into a tiny wire mesh strainer for a few seconds to remove water from the whites (this method produces a tight, round egg every time - and no, the whites do not go through the strainer).
    p.s. The adding of vinegar is not ABSOLUTELY necessary, but the difference in texture makes the world of difference. If you can taste the vinegar, then you've simply added too much. Great video Laura. Many thanks.

    Hi Laura! I'm a huge fan! Recently, I ordered avocado toast from a restaurant called Nopa in San Francisco. It was AMAZING! Now, All avocado is delicious but I have to tell you what made this one really unique- the avocado topping was chunky and mixed with capers and pickled onions. It was topped with parmigiano and microgreens. Oh! and it was on this really thick crusty wheat bread that was grilled over a fire. The main thing that set it apart was the salty briny flavor from the capers and pickled red onions. Next time your craving avocado toast, try mixing in those two ingredients. :-)

    This one took me by surprise. I switched it up a little but that poach technique is truly amazing indeed.
    So, instead of butter I crisped the bread with some pesto and over the avocado, under the poached egg was a little less than a 1/4 inch slice of fresh garden tomato added cold right at assembly. I really couldn't believe how much I enjoyed it. The hot/cold crunchy/creamy contrasts with savory egg oozing, good lord.

    Thank you Lauren I made it this morning yummyy. i replaced the butter for coconut oil and only had cilantro which it was great because i enjoyed the zing of it. i put a dash of curry powder instead of the paprika. great idea and so delicious.

    She said she didn't want to "over power" the taste with certain ingredients, but she drowned the guacamole with lemon!
    Next time throw your avocados in a blender to get that creamy texture for your toast. DON'T ADD LEMON! It will taste so good you will eat it all......

    Avocado toast seems to be the hot new thing right now. It's so simple and it tastes sooo good! This variation with the egg makes it better. With or without the egg, this toast is amazing.

    I watched this vid. a week ago, and I've been trying ever since to cook Poached Eggs,
    I even had a contest with my 13 years old sister on who's will come out better, but it didn't work, (came out good but not poached) and today I DID IT!! thanks for this great idea!
    BTW, instead of Avocado, i grilled pieces of Mushrooms, Tomatoes, some Scallions and Ped Pepper- spice it with Curry, Salt, Pepper and Cumin- it came out amazing!!

    I think a quick fresh tomato, red onion, cilantro, lemon salsa would go amazing on the avacado with the egg on top. Something bright with a little bite to it to contrast the creamy avacado and silky poached egg would take this to another level.

    Made these for brunch today & they were fabulous. We're on ww so I skipped the butter but added mrs dash onion & herb to the avocado mix . Followed your poached egg routine. & they came out perfect. Love your vlogs. Thanks so much!

    i do this but when i'm lazy i just use chunks of avocados i literally cut my avocado in pieces and put it on my bread, put the poached egg on top and add some additional veggies and some salsa on top! my go to breakfast

    I love to try new recipes for breakfast. I made this for breakfast this morning and it was a hit!! YUM!! So easy to make too. I was looking for recipes using avocados because I had three that needed to be eaten. Now we only have two. We will be adding this recipe to our regular breakfast menu items. I've tried so many of your recipes and there are definitely favorites that we have already used again and again, Thank You So Much!!

    I love this, i used to make this every sunday for my brother and myself, but instead of lemon juice i used lime juice in the avacado. So good.

    Didn't think this recipe would be so yummy. I used your recipe-added some grated parm cheese and siracha sauce to tomato on top. Amazing good. Thanks Laura.

    I'll try to poach eggs this way for my eggs benedict tonight, I make them almost everyday for my husband, he loves poached eggs but sometimes they are tricky to make, so thank you and Krista for this tip
