Also called pimenta moída, or pimenta da terra or pimenta açoreana. It’s basically crushed (rough purée or consistency to preference) red peppers and the peppers type used is usually the red shepherd pepper. The level of pepper heat is your personal preference. My mom likes the pepper with heat. I prefer medium heat or mild.

I use your method as well. It’s called “estralando” a carne. It definitely makes a world of a difference in flavour

My mum use to do this recipe using beef.
That is called um prego, when made with bife
What was malagetta? I understood the rest of the marinade but not that?

In our region of São Miguel, Malagueta is more like piri piri or also know as hot pepper sauce. We call this pepper sauce pimenta moída.
