Hi and thank you for this video. Question for you, do you put simple syrup on a frozen cake or room temp cake? The one and only time I tried it on frozen layers I noticed that the liquid wasn’t absorbed and only sat on the surface of the cake layer.
I do it on room temp cakes. I freeze the layers, thaw them, then level them and spray the layers before I fill the cake. You're right, if the layers are frozen, then the syrup can't penetrate at all.
I love this spray idea! I worry about over saturating and risking having the cake turn into quicksand lol… this is brilliant. Thank you! 💕💕💕 And I think it’s the “moy” in moist for me haha. But it’s great, you’re making “moist” sound less weird. I’m rolling with it with you 😜

I always add it after it's thawed to room temp. The cakes are warm when I freeze them, so I wouldn't want to add it then. I wouldn't torte a warm cake because it would fall apart!

You don't have to boil it, heating it up just speeds up the process of the sugar dissolving. You can also put it in a container and shake it to blend (or use a blender). But you want to make sure all of the sugar is dissolved!

Are you using a doctored mix or a scratch recipe? With cupcakes, a lot of people keep them in the oven too long, which causes them to dry out. Try taking them out a minute earlier if that's the case. And after I make cupcakes, I let them cool for 1 minute. Then I get a piece of cardboard or a cookie sheet, pull a piece of food safe plastic wrap over it. Then place the cupcakes on top. Wrap them in plastic and freeze them overnight. Freezing them while warm helps trap in the moisture!

I never used simple syrup, my mom just sweats her cakes and she taught me that but I recently had an issue because I don't know what happened but the cake was crumbly and I felt so bad about it& I don't want to do that again so I'm going to have to start doing this I don't have room to freeze the Cakes tho, I'm Small and home based and never have a problem but this one was an exception... I don't do too many Layered cakes mostly pound cakes but lately I have had so many people asking so I have to rethink this😔 if you're doing a 6in cake what cake container works best for these size cakes? I normally do a plastic petal shaped dome container I get from my local cake supply for 10in cakes... I have an order for Easter, would be my first 6in, I'm self taught and my mom who's been baking for over 50 years @ home taught me what she knows, I have tried doing some things different, I'm still fun tho process of learning... I have a one lady that's requesting a 6in pineapple, I don't know if I should cut down the recipe or how to cut down the recipe for that size cake... I have so many questions, but I will definitely start using simple syrup in a spray bottle, I will have to make room in my freezer for when I am baking. Sorry for all of the questions. I just want to make things right by learning new ways of doing things

Nope! I just let it sit out for about 10-15 minutes before I use it.

Yes! I use this simple syrup on all flavors I make.

You can spray the tops. I just find that it penetrates the cake better if you spray it on the inside too.

Have you tried this on gluten free cakes ? Do you have any tips on keeping those moist? I have noticed that they dry out faster than a regular cake.
I haven't made GF cakes. I know it can be challenging to perfect a recipe and I usually refer people to a local GF bakery when they ask for one!

i wanted to know if we can use simple water instead of sugar syrup... won't sugar syrup affect the sweetness of the cake?
I find that it enhances the sweetness, not overpowering. Using just water will make the cake soggy.

You can brush it on if you prefer. I prefer the spray because it's a more uniform coating.

Plain water will weaken the structure of the cake and break it down. You need the sugar as well!

I bake, wrap and freeze. Thaw at room temp (still wrapped). Unwrap and torte / level the layers. Spray with simple syrup before filling the cake.
