Because when there's no cam, when WE don't see her, we focus on AND ONLY on her voice, rather than when we can actually see her, we are not 100% on her voice, but we inconsciously split our attention on hearing AND seeing her. Another point is that, most most mosssst of the time, when there are cams, the quality of the sound is a bit lower (because of the tech used to record). And last but far from being least, as +Jake Smith said, she does struggle with anxiety (even though -Oh Gosh!- she really doesn't have any reason to, she is just such a Goddess!!!). Personally, I don't find that she sounds better when there's no cam, anyway. But if some people (like you) find that, maybe it could come from one of those reasons... Just a guess... I could not say.
