  • Cristiano Tomei, the charismatic Tuscan chef based in Lucca, masters two versions of the Italian potato gnocchi: the first one is the original recipe, quick and easy to prepare even at home, with a dressing inspired by the 80s, made of scampi, green tomatoes and beer. The second version, more elaborate, shuffles the cards using overcooked pasta, fish broth and no eggs.       Even if one doesn't understand Italian, the subtitles explain what Chef is saying. No problem as far as I can tell.

    An important note to English speaking viewers. Please note that at 10:15 when his comment to use “semola” it is translated in the english subtitles as “semolina” - it is wrong. Semola and semolina are two different flours. Semola is finely milled. So fine that it is frequently added to 00 flour for fresh pasta making. Semolina is coarse, like corn meal size. It will turn fresh pasta for example into a rock. I know, “been there, done that” as we say here.

      semolina in english is the ground endosperm from durum wheat, as opposed to flour which is ground endosperm of regular wheat. it makes no reference to the size. in english you would buy coarse semolina or fine semolina.

      Can you please tell me what semola is then. I cannot make fresh past with semolina. It becomes a rock and impossible to roll out by hand. However I can easily make fresh pasta with semola. I usually incorporate about 20% semola to 80% 00 Flour and thus the pasta rolls out beautifully with a bit of a slight enjoyable chew. So again, what is semola? Thanks.

      @@emiliamartucci8291 You're absolutely right and the commenter above is wrong. Semolina is an English word and it refers to coarsely ground durham wheat (they don't refer to it as coarsely ground, because that's the only kind they make). It should be fine in small amounts when mixing with 00 flour though? But you do want to ideally get semola rimacinata for the finely ground variety. That's what Italians use to make pasta/pizza etc.

    You have to love this chef even though he did overcook the pasta and he is an italian which makes it worse, his enthusiasm and positive vibe, his creativity and joy in making the dish as well in making this video is outstanding.       Well, to that gnocchi, you MUST overcook the pasta or you can't do the gnocchi, because you need the pasta soft and full of 'brodo'.

      You're talking like it was some accident, he overcooked it on purpose, because he needs it soft to push through the sieve. Not like you can push al dente pasta through, and it would make the gnocchi have hard bits in it.

    Apparentemente la prima versione ha degli ingredienti slegati tra loro ma sarebbe interessante assaggiarla per capire se è davvero così.
    L'altra versione più classica mi ispira di più .

      I think this is a "Costoluto fiorentino" variety. It's not so easy to find outside Tuscany and it tends to remain a little green, if you keep it a little unripe it's more green than red but still sweet and soft.
