    This PORK CHILE VERDE is a 5 Star winner, stewed in a green tomatillo, Anaheim and assorted pepper sauce until the meat is fall apart tender. This is a true Mexican classic that is packed with flavor and fit for a King. This stew can be served with Mexican rice, beans, avocado and flour tortillas to give you the best hearty meal you could ask for. You can top it with your favorite toppings or you can use it over your burritos as well, there are countless of combinations you can create with this dish, and it freezes well too to be enjoyed enjoyed later. This unique hearty dish is sure to please.
    TOTAL INGREDIENTS---------------------
    2 &1/2 lbs. Pork Butt (cubed)
    2 medium gold potatoes
    1 small onion (julienned) (amnt to your liking)
    4 Anaheim peppers (seeds and veins removed)
    4 tomatillos
    2 serrano peppers (optional)
    1 jalapeño (optional)
    2 bay leaves
    4 garlic cloves
    1/2 tsp cumin
    1/2 tsp peppercorns
    6 whole cloves
    1 tsp oregano
    1/4 tsp salt (for molcajete)
    1 C. water
    1 tsp onion powder
    1 tsp garlic powder
    medium bunch cilantro
    2 C. chicken broth (as needed)
    1 Tbs.kosher salt (as needed)
    BROKEN DOWN INGREDIENTS
    BLENDER INGREDIENTS-----------------------
    2 & 1/2 roasted Anaheim (rest is chopped)
    4 roasted TOMATILLOS
    2 serrano peppers
    1 jalapeño
    medium bunch cilantro
    1 C. chicken broth (as needed)
    MOLCAJETE INGREDIENTS-------------------
    1/2 tsp whole cumin
    1/2 tsp peppercorns
    6 whole cloves
    4 garlic cloves
    1/4 tsp salt
    1 C.water
    TO ROAST INGREDIENTS---------------------
    4 Anaheim peppers
    4 tomatillos
    2 serrano peppers
    1 jalapeño

    I am a 61 year old Mother In Law with a 22 year old daughter in law, I am having her cook with me all your recipes starting this week so she can learn to cook with more confidence. We have a great relationship and when I showed her your video she was ready and excited. Thank you for helping me show her how to cook delicious and family friendly meals.       lucky daughter in law! I am 65 and still remember so many cooking lessons from my mother-in-law: recipes, best pots and pans to use, home and kitchen organizing, etc. Shortly after we got married, she gave me a number of inexpensive recipes for healthy, delicious meals… she called them her economy meals! That love and concern was the foundation of our good and strong relationship for 30 years before she passed away. Friends come and go, but family members are with you forever… so smart to nurture that relationship! Rachel’s videos are a great place to learn SO many skills!

    This lady gets down! My mother got cancer when I was little and my soccer coach son was my best friend they asked my mother if they could have me and raised me! Mrs Hernandez knew a little bit of English and she cooked bomb and this lady is a lot like her food I was raised on!

    I made this dish tonight, to have it ready for the hubs when he comes back from work. Oh my, it came out so good! I have never used anaheim peppers in any dish, the salsa came out very good, not acidic at all. When I make carne de puerco en salsa verde, I usually cook the pork first, then give it a little fry, but frying it first made a huge difference. The only think I did different was I didn't add cilantro to the salsa, completely forgot it, but it still came out delicious. Thanks Raquel!

    Made this today for the first time. Got all the supplies yesterday. I've eating this in Fresno and it's delicious so I wanted to try making it myself. Such easy follow along instructions. So far everything turning out beautiful and suprising waiting to put my golden potatoes in, the simer another 20, got my beans done and I bought store bought tortillas. Thank you! 😊 can you imagine how one would cook like this daily? All your recipes are fantastic. I made the meatball soup. It was delicious.

    I made this today. One recipe of yours is better than the next. Every recipe of yours has been delicious. At 73 I recently found out through DNA that my great grandmother was Hispanic. You have been my cooking instructor for the last two years during the pandemic. I am striving to cook delicious Mexican food jn her honor.

    Oh I wish I could of smelled your kitchen when you were making this as well. What I love about being able to make this recipe is that there is soy pork that Johnny just loves and he's going to love it better once it's in this sauce.     My husband and I love this recipe, it's one of our favorites from you. My husband prefers less cloves though and I prefer the amount the recipe calls for. Guess I need to find a happy medium 😂 Thank you so much Rachel for sharing your love of cooking. So many of your recipes follow the way my mom cooked and having a Hispanic husband the recipes are also second nature to me after being married for 22 yrs. You've made cooking an enjoyable experience again.

    Love watching u cook ,, my momma learned how to make homemade tortillas when her and my dad lived next door to a Mexican woman,, who taught her how to make homemade tortillas with beans and enchiladas and fried potatoes when they first got married ,,my dad had to have them every night !! When she didn't make beans potatoes or homemade tortillas!! Dad would sit at table ,,,, and say,,, is this all were having !!! Love watching ❤

    My favorite Mexican dish & maybe my all time favorite dish of any cuisine. I make mine a little different but I am going to try yours next week. I am a widow & live alone but make Chili Verde every week, I eat it for breakfast with eggs, refried beans & flour tortillas. It's not hard to go through a batch every week.
