Raw Coconut Halwa (Kachche Nariyal Ka Halwa) Recipe
Ingredients:
2 cups grated raw coconut (kachcha nariyal)
1 cup condensed milk (milkmaid)
1/2 cup milk
1/4 cup ghee (clarified butter)
1/4 cup sugar (optional, adjust to taste)
1/2 tsp cardamom powder (elaichi)
A pinch of saffron strands (optional)
Chopped nuts (almonds, cashews, pistachios) for garnish
Instructions:
Preparation:
Grate the raw coconut and set it aside. You can also use desiccated coconut if raw coconut is not available.
If using saffron, soak the strands in a tablespoon of warm milk.
Cooking the Halwa:
Heat a non-stick pan on medium flame and add ghee. Allow it to melt completely.
Add the grated coconut to the pan and sauté for 5-7 minutes until it releases a pleasant aroma and starts turning light golden.
Lower the flame and pour in the milk. Stir continuously and cook until the milk is absorbed by the coconut.
Adding Sweetness:
Add the condensed milk to the coconut mixture and mix well. If you prefer a sweeter halwa, add the optional sugar at this stage.
Continue cooking on low flame, stirring constantly to avoid sticking, until the mixture thickens and starts leaving the sides of the pan.
Flavoring:
Add the cardamom powder and saffron-infused milk (if using) to the halwa. Mix well to incorporate the flavors.
Cook for another 2-3 minutes, then turn off the heat.
Setting the Halwa:
Grease a flat dish or tray with a little ghee and pour the halwa mixture into it.
Flatten the mixture evenly with the back of a spoon or spatula.
Garnish with chopped nuts, pressing them gently into the halwa.
Cooling and Serving:
Allow the halwa to cool down completely. Once cooled, it will set and can be cut into squares or diamond shapes like milk cake.
Serve as a dessert or sweet treat.
Tips:
For a richer flavor, you can add a tablespoon of khoya (dried milk solids) while cooking.
If you prefer a softer texture, reduce the cooking time slightly.
