It's also important to Choose an oil with high smoke point. I'm China they would use rapeseed oil. And if I'm not wrong ghee is not recommended since it's a dairy based oil (do correct me on this)

The rust is still embedded in there. You can actually pour vinegar in the wok and let it soak for 24 hours to remove the rust
Tempering the wok and cleaning the wok are two different processes. Vineger will clean the wok but tempering still needs this process...
