It's got a lot of hidden potential that some writers notice and make great use of. As for recommendations: STEINS;GATE is a great one to start with, the atmosphere is like nothing else, the cast is memorable, and the VN goes much more in depth than the anime does. Another one is Higurashi, an 8-part mystery & psychological horror series. The first chapter is free on Steam with 10 hours of reading to give you a chance to experience it before getting the rest. With that one I recommend getting 07th Mod as it adds voice acting and updated assets from the Nintendo Switch version. From the more cosy ones there's Summer Pockets from the author of CLANNAD that has some of the funniest characters I've seen. Mostly romance focused and aiming to make you cry by the end of it :P There's much more out there but those are the three from the top of my head

If you want to try some stories, I would recommend omniscient readers viewpoint as a pretty good one. It’s quite emotional and good, especially the recent chapters :D Otherwise, I would recommend downloading webtoons and then jumping down an infinite rabbit hole of stories, binging until 3 am where all your senses becomes one and you feel like you could collapse at any moment, but you keep reading just to find out what will happen. Can’t recommend it any less.
If you're interested in a good anime which maintains much of the original material I wanted to suggest "Frieren: Beyond the journey's end", which explores a fantasy world from an unusual point of view

Omggg!!! I thought I was the only one who was an absolute deadbeat when it came to understanding stories!! Not just that but I couldn’t tell between good and bad art nor animation. I would watch something like Naruto/ seven deadly sins and Violet Evergarden and I could NOT see the difference for the life of me.
As for the visual novel question, a very common answer you’ll find is Steins;Gate, which is a great pick! It is my personal favorite. If you enjoy that, you may be interested in some of the other entries in the series, such as Chaos;Head NoAH, and Robotics;Notes Elite. Umineko When They Cry is another popular choice that I think is worth reading. If you want something a little less popular and more “artsy”, Remember11 is a great visual novel that gets better the more you learn about it. It’s also a story that can’t be told any other way than a visual novel. To go extremely niche, The Sekimeiya: Spun Glass is an incredible mystery story with so much detail in its mysteries and solutions. Like Remember11, it can’t be told any other way other than a visual novel format. It’s less focused of being a story and more focused on being a puzzle that you can solve as you read it. This one is a little more for huge mystery enthusiasts instead of the casual reader, but it is an incredible work that I think should get more praise! Hope this helps!
if you're looking for good visual novels then i definitely recommend either Umineko or Subahibi, keep in mind theyre both VERY long (50+ hours and especially umineko which can take over 100) so it might be not your cup of tea since they require some time investment but it is something to consider since theyre definitely some of the best stories in the VN space in general
