Ancient grains are a trending alternative in recent years to common wheat, corn and rice staples. Along with the ancient wheat species like spelt, farro, and einkorn, there are also the group of gluten-free minor grains and pseudocereals. These are some of the original grain crops that have been cultivated since the days of early agriculture and are less influenced by selective breeding.
These are great types to have on hand in the pantry when grains are on the menu, especially if you have gluten sensitivities. They also make good wheat flour substitutes. Fantastic video! I have a 20 foot strip along my fence I am growing amaranth for the second year. It's a bit of work for the seeds, but very good production. This small crop lasts me most of the year for my baking needs. About 5-7 pounds of seeds. Next year might be more as I noticed they self-seed the area they grow.

I’ve been ridding all grains from my pantry that might have been contaminated by the chemical “ glyphosate “ ( active ingredient in Monsanto’s ‘Roundup’. ) While researching the use of this chemical, I discovered it is used as a desiccant, to aid in obtaining an early harvest, so that a higher yield can be obtained. Sorghum and buckwheat were two grains mentioned as crops where glyphosate is often used. I’m now beginning to call sellers, asking as to whether or not they source from farmers who use this chemical. It cannot be washed out or cooked out. It is becoming more well known as a human carcinogen. Apparently...If it is USDA Certified Organic, then it will be “glyphosate free.” Worth checking into.
It is also used as a herbicide in 3rd world paddy cultivation.
So the rice you eat may contaminated too with it dear lady.
And a lot of paddy farmers died with chronic kidney disease thanks to this monsantoes evil chemical!

Millet is my favorite because its like rice and corn in one without the negatives. Its also an alkalone grain which the video missed. Curious about Teff, yet to try it.

In Congo we do too eat the amaranth leaves as spinach, we call it bitekuteku but Congolese do not eat the amaranth grains unfortunately🤷🏾♀️

The main reason the Spanish banned amaranth was the the red colored ones were used to represent blood in Aztec religious ceremonies, not to destroy them.
