Making one pot chicken biryani using the one pot method

The 7 March is Pranesh's (the cameraman's) / southafricanwanderer birthday so we decided to make chicken biryani for the evening. We have a request for the one pot method of cooking the biryani, or akni as some may call it, instead of the layered method. Because chicken is softer than lamb, it can get overcooked and fall apart/get shredded if cooked too long so for the one pot method there are a few changes to be made to the cooking steps.
Ingredients
1 small free range chicken
Marinated with:
1 tbs mixed masala
1 tbs chicken spice
1 tsp crushed ginger and garlic
handful of fresh thyme
1/4 cup oil
1 cup maas/sour milk
For braising
2 cups rice, soaked for 2 hours ahead of cooking
1 med onion sliced
3/4 cup biryani (masoor) dhal soaked overnight
1/2 cup oil
cinnamon sticks
bay leaves
1 tsp crushed ginger and garlic
fresh thyme
1 sprig curry leaves
1 cup frozen peas
For dry roasting:
1 tsp saunf (fennel)
1/2 tsp black pepper
1/2 tsp jeera (cumin)
1/2 tsp mustard seeds
1/2 tsp dhania (coriander)
2 star anise
6-8 cloves
4 green elaichi
1 curry spoon mixed masala (4 tbs)
1/2 tsp dhania powder
1/2 tsp garam masala
1 tsp pure chillie powder
1/2 tsp dhania powder
1 tsp hurdee (tumeric)
1 tsp rough salt - adjust to taste
dhania and mint to garnish
1 med onion, fried to garnish
4 potatoes, deep fried (with egg yellow)
Served with dhal and salads.

Hello aunty thank you for another delicious but one pot easy method. Just a quick question you added salt to the chicken but did not add salt when you added the rice. Is the salt you added to the chicken is that enough for the rice as well. Thank you
Yes it usually is. But I would suggest tasting before you add the rice just to make sure it will be right - the curry should taste like it is a little extra salt

Look for 'cultured buttermilk'. The thicker the better
Buttermilk
An alternative is to use a cup of milk and use 2 tablespoons of lemon juice to curdle the milk.
Buttermilk. Or make your own 1 cup milk add to that 1 tablespoon white vinegar
